Yes! You don’t have to double the broth (but you do want to make sure you have enough broth to fully cover the noodles while cooking). In this recipe for my Moms Homemade Chicken and Egg Noodles I share how I increase the ingredients depending on the number of people I am serving. That may give you more detailed instructions!
