See, she's just trying to make your life easier!
I grew up eating it without the peeling too, but once I had kids I'd cut it in half circle slices and or triangles and let them eat it that way. And now that's how we eat it. It all came from me being lazy :)

I figured there were plenty of nutrients in the skin. I was raised eating peeled kiwi, so it never occurred to me to try it with the skin on!

PS. Caroline prefers it with the skin on. How do we know? She reached out and grabbed a kiwi and just took a bite. She refused to eat it after we gave her a piece that was peeled. ;-)

The skin is definitely edible and how we eat it, but the reason a lot of people peel the kiwi is because they don't like the texture. We don't mind it (and like most fruit there are a lot of extra nutrients - like fiber - in the skin). Eating it with the skin on is definitely easier :)

Random question... You don't take the skin off the kiwi before eating it?

We absolutely love kiwi here. I am allergic to bananas and having kiwi on hand helps with the potassium issue for me - when I was running they were a must!
The goat cheese dressing sounds lovely with the salad ingredients. I'm going to have to try it!
