					<description><![CDATA[I went to London back over the new years eve 2012. while there I ate at a restaurant that had a baked brie that was to die for.  I&#039;d never been able to find the recipe that even comes close to it. so I stole many different recipes to modify and find the flavor I was looking for.

after much experimentation, I found the flavor profile I was looking for. 

for the topping: caramelize a combination of  onions and filberts(small hazelnuts). 

for baking: at 350 degrees: top whole brie wheel (including rind) with apricot jam and put full caramelized mixture on and around the wheel. bake until cheese melts. around fifteen to twenty minutes.
