Yes – I think chicken would work just fine in this recipe. I may try it that way next time actually!

Rachel – I actually sliced a boneless pork loin for this. I had one left over from the BBQ pork loin I made the other day and decided to just use it for this recipe! It worked fine for what I needed it for.
