Can we talk about how much I love a good one pot recipe? First of all recipes like this make cleanup a breeze. Secondly, there’s just something about all the flavors melding together in one pot that makes a dish extra good. Finally, one pot meals usually equal comfort food. And who doesn’t love comfort food?

I love this One Pot Creamy Garlic Noodles recipe for all those reasons. It’s flavorful, comforting and easy! This is also what I love about the new cookbook A Year of Favorites. The delicious recipes found within are flavorful, comforting and easy. If you are familiar with the food blog Favorite Family Recipes you would expect nothing less from their cookbook. Their cookbook is full of the same kind of family friendly recipes you find on their blog….

I’m slowly giving into the fact that it’s no longer summer. The weather in Kansas has been so wishy washy…75 one day, 30 another. I’ve been holding onto those 75 degree days with all my might, but they have been slowly disappearing, giving way to gray skies and colder temperatures. I think we saw our last warm day for awhile at the beginning of this week.

With the cold weather comes the return to comfort food…those dishes that aren’t so popular in the hotter days of summer resurface for the season. My attempt to hold onto summer sometimes shows up in what I make for comfort food. For example, we have Ham and Swiss sandwiches all the time in the summer so to “winterize” that favorite, I like to make a Ham and Swiss soup. This is one of my absolute favorite “hearty” soups to make, for good reason. The flavors blend together so nicely and it really is one of those soups that warms you up from the inside out….

For those of you who participate in the Lenten season, you know that the sacrifice of meat on Ash Wednesday and every Friday during Lent is upon us.

It always cracks me up when people refer to giving up meat as a sacrifice. Maybe back in the days of Jesus, fish and seafood tasted horrible, so it was a sacrifice. But now? Now with all the different varieties of seafood available, the plethora of seafood recipes to follow, the spices to enhance, etc. meatless is not a big deal. Plus, even when you can’t have meat, you can always have beans! Now ask me to give up beans and that would be considered an absolute sacrifice. …

Boys are funny, aren’t they? March Madness is in full swing and the bracket talk around here between my husband and son and his friends is so funny to listen to. Baseball season is also upon us, so we are kind of limboing between being fans of two different sports at once.

The other day my son was on the phone (actually using it to talk, not text, which seemed odd) and he and his friend were alternating between discussing the odds of various basketball teams winning and stats of favorite baseball players. I couldn’t keep up. In fact, I have to think of a mnemonic device just to remember a single phone number, and then I’m lucky if I can even recite it. I still have to look up my sisters number when I call her, and she’s had the same phone number for forever!

It’s almost like boys have a special place in their brain to keep batting averages, percentage free throws made, season all time bests, etc. My son can’t remember that Thursday has been trash day for every day of his life, but if you ask him who was the all time leading base stealer in the MLB in 2009, he can tell you. It’s nuts. …

Black Bean, Corn and Cheese Quesadillas make an easy and tasty weeknight, meatless meal!

You know what I hate? Food that tastes so very good but is ugly as heck to photograph.

Hate might be a strong word, so I’ll change that to really dislike. When I make a recipe that is a quick weeknight meal that my entire family loves, but my pictures turn out looking like something less than delicious, I get annoyed. I’m afraid you’ll take one look at the pictures and say “Nope… that food is ugly! I don’t want to make that, pin that, share that, etc.”

This one time, don’t judge a recipe by its picture! Honestly, Bush’s black and refried black beans and corn with salsa and gooey, melted cheese smashed between two tortillas isn’t pretty. I’ll admit that. But friends, this recipe was beyond easy, plus really quick to put together and it tasted really good. I’d hate for you to miss out! …

For some reason, they keep saying I’m supposed to feed them at certain times of the day. Breakfast, lunch and dinner? What? I didn’t sign up for that, did I?

As much as I love to cook, I will admit that I don’t love cooking three meals a day… and having to feed people for breakfast, lunch and dinner is just right at the point of too much hassel. Really. Don’t you agree?…

I am currently on a little 8 day detox / cleanse trying to rid myself of some of the bad food habits I can’t seem to kick myself from. I’m on day 4 (so half way through) and it’s going really well! The good thing about this detox is, even though I have had to eliminate sugar and carbs for a few days, I am getting to enjoy a moderate amount of protein. As long as I can have my favorite beans, I’m good to go.

I’ll let you know how things went at the end of 8 days. I can tell you this much… being a food blogger and being surrounded by all the temptation on the web is the toughest part. However, what doesn’t kill you makes you stronger, and all that, right?…

This year, she decided to team up with Jen from Juanita’s Cocina to create a blogging event to help raise awareness and support those who have been effected by heart disease. Because of this, the blogger event, Recipes From the Heart was born.

I’m sure if you ask around, there isn’t a single person you know who hasn’t, in some way, shape or form been touched by heart disease. Even still, how has that changed your lifestyle? Do you try to stick to a healthier diet? Do you exercise more often to help keep your heart in shape? What is one way you are working to keep heart disease at bay?…
