Friends… I’m going to admit, this time of year is hard for me. I am one of those people who tends to say yes and overcommit to way too much, and then I’m a grouchy bear when I should really be joyful and happy. I LOVE this time of year… love love love it. I get so angry with myself when I over complicate the season by putting so much pressure on myself to get it all done! That’s ridiculous and not a good way to celebrate the holidays!

I am excited to say that this year, in The Doyle household, we are focusing on keeping things simple. We aren’t going to say yes to every event, party, opportunity that comes along. Instead, we are going to practice the art of living simply… and I really do believe it is an art! Simplicity is not something that comes naturally to many of us!…

When I say “Game Day” you all know what I mean, right? It’s football time!!

Game day extends past one day at our house to pretty much any day football is on. Some days friends or family join us in front of the TV (us meaning my husband and son) other days its just us. Either way, the best part about game day for me is the food!

You know who makes game day food pretty great? Alexia foods. Remember them? I worked with Alexia last year on a recipe challenge to create a new fry flavor. I’m excited to share that I’m working with them again and will be using some of their products over the next several months to make meal time and game time easier!

(In addition to their popular varieties of fries, Alexia also has a great lineup of appetizers and artisan breads. Make sure to check out all their products on their webpage!)

Things are always a little nutty around our house and because of that, I am a huge fan of products that can make my life a little easier. For our most recent game day watching, I used Alexia Sweet Potato bites to re-invent sweet potato casserole, in a bite sized form. Super simple to make and a delicious appetizer to pass around during the game, Sweet Potato Casserole Bites are a fun bite sized app sure to be a hit with game day fans.

Here’s a little video and the recipe is below, so I hope you’ll check it out. Before that though, I have a great giveaway going on from Alexia that I think you’ll love. This research was all part of the Alexia “Reinvent a Classic” Fry Challenge. After much thought, calories, and consideration, I finally settled on a fry / spice combination that totally fits where I’m from… the BBQ heartland, Kansas City. I can’t wait to share the recipe for these Kickin’ Barbecue Style French Fries!

The inspiration for these Kickin’ Barbecue Style French Fries comes from our favorite barbecue restaurant, Oklahoma Joe’s. They have the most amazing fries which are tossed with their rib rub. My husband makes some pretty awesome ribs with his own special rub, so I decided to take some elements of his rib rub to create a seasoning mix for some fries.

The end result are some julienne cut fries made with Idaho russet potatoes. A zesty kick, a hint of sweet and full of flavor, these fries are so addicting. I hope you enjoy them!

Keep an eye on Alexia Foods for updates on all the submissions for the Reinvent a Classic Fry Challenge.
