I’m going to share this Ice Cream Muffins recipe and the awesome family vacation prize pack giveaway with you in just a second, but first…can we talk about travel and family vacations? We just returned from our annual spring break family vacation and even though we tried to be really conscientious about spending money, we still spent more money than we budgeted. (By budgeted, I mean we said “hey, let’s try not to spend a ton of money on this vacation”. And we failed.)

To be honest, traveling as a family of 6 is expensive no matter what, but there are ways to save money when going on family trips. Here are a few of my favorite tips I try to follow for saving money while traveling as a family. …

Take this quick and easy shortcut to make tasty California Avocado Ice Cream at home, without a lot of work!

The very first time I had Avocado Ice Cream was at Herzog Wine Cellars in Oxnard, California. I’ll admit, I was really hesitant to try avocado ice cream at first. No matter how much I love Avocados, the thought of this beloved, savory fruit being a part of dessert just didn’t sound good. I quickly put any hesitation aside after the very first bite… avocados and ice cream is a fabulous combination!

The cool, creamy, nutty flavor California Avocados add to ice cream is unique and delicious. In fact, it’s one of those flavors you’ll crave time and time again after trying it the first time!

Making homemade avocado ice cream isn’t too hard, but I wanted an easy way to get the flavor profile of avocado ice cream without having to drag out my ice cream maker. The result is what I’m calling “Shortcut Avocado Chocolate Chip Ice Cream”. You see, with this method of making ice cream, you simply doctor up a carton of high quality vanilla ice cream with some California Avocados and chocolate chunks. This is the real deal, without a whole lot of extra effort! As a bonus fun way to serve this treat, I scooped the prepared ice cream into the avocado shells…easy and zero dishes to wash. That’s my kind of dessert!…

When I was a young girl, my parents would always let us choose a restaurant to go to for our birthday dinner. We could choose anyplace we wanted to go, since it was our special day. Now mind you, I grew up in a tiny town of 1,000 people, so the restaurant choices there were zilch. The closest place to eat was about 15 minutes away, and then 30 minutes away there were even more options. But no… I didn’t choose a restaurant close. I always wanted to drive up to Kansas City for my birthday, which was 2 1/2 hours away, just so we could eat at Denny’s. Yes, Denny’s.

I loved Denny’s for two reasons. One, they had those red padded swivel stools at the bar my parents allowed us to sit at only on special occasions. Two, they had the tastiest waffle sundaes. Those two reasons alone were why I chose Denny’s for my very special, drive for 2 1/2 hours to eat, birthday dinner. …

I’m not good at this… the whole dealing with the loss of a friend thing. I’m just not. I tend to avoid life and immerse myself in everything but confronting the fact that a friend has died.

This past week, the blogging community has rallied together to remember a dear friend of ours, Joan Hayes. Joan was the southern voice and tremendous talent behind the blog Chocolate, Chocolate and More. Last Thursday evening, word began to circulate that Joan had been complaining of a stomach ache, laid down on her couch and simply never woke up. It seemed inconceivable to me that my vivacious and full of life friend could just be gone. I had chatted with her just a few days prior and she was her normal, cheerful, joking self.

It turns out that Joan had suffered a heart attack. Friends, if you don’t click on any links in this post but one, make it be this. The signs of a heart attack in women are so much different than they are in men. Please read this to educate yourself so hopefully you’ll be aware of the signs of a heart attack if the situation arises. …

I don’t drink cocktails a lot, but when I do and it’s summer, I want something cool, light and refreshing.

One unfortunate summer my summer drink was Jeremiah Weed Sweet Tea and Lemonade. Have you ever had that? So good, right? Too good… and I think by early June I had learned just how good it was and how easy it went down and drank just a tad bit too much on a fun neighborhood night. Let’s just say, that night my friend Sara and I ended up out on a trampoline at 2am getting and giving the scoop on life to our college bound neighbors. I think that was the end of the Jeremiah Weed Sweet Tea concoction for that summer. …

Bye bye Harlem Shuffle… let’s all do the Moo Moo Shake!

The Moo Moo Shake isn’t the next dance craze. It is, however, a delicious fruity tasting milkshake creation which is a favorite of Lynda Foster, a dairy farm owner/operator my kids and I had the pleasure of spending a morning with earlier this summer.

We woke up, not so bright eyed and busy tailed, at 5:30am to head to Fort Scott Kansas, home of Foster Dairy. We made it to Foster Dairy in time for the final milking at 8:30am. At that point, the Foster’s had already been up and milking since 4:30am. My kids knew right then and there not to complain about being tired! …

There is the one camp who thinks a milkshakes should be easily slurped through a straw, with just the right amount of effort, but not so much that you struggle. Then there seems to be the camp of people who firmly believe milkshakes are not something you drink… they are to be spooned out of their glass, no straw required.

I’m in the straw camp. My husband is in the spoon camp.

For me what it comes down to is this…I really don’t want to have to work to drink my milkshake. It shouldn’t be an exercise for my cheeks to try and pull the deliciousness through the straw… it should be an effortless experience. In short, I’m lazy….
