Well, hey there! It’s been a minute. OK, more like 8 months, but I’m slowly but surely getting reacquainted with my blog again after a much-needed hiatus. I missed you and this space was missed. I’m excited to make a nice, easy return to slow blogging my way. Slow blogging is the key to my happiness. I just have to remember to not get caught up in all the people doing all the shiny new things. I’ll stay in my lane and just do this the way I want to. I’m glad you are here with me and are willing to continue on the ride with me.

I’ve got a really great Creamy Mushroom Pasta Recipe to share with you today. This is a great pasta dish to get you out of the dinner time rut. But first, before we get to the recipe, let’s catch up. (To skip all of this chatter and go straight to the recipe, just scroll to the end of the post).

Last week was Dine & Dish’s 8 year anniversary! I can’t believe I totally forgot to do something to celebrate with you all. How about if after the holidays we have a prize packed celebration? We can throw a little fun and excitement into the doldrums of January instead of having all the fun be this time of year. Does that sound good?

Whether you’ve been a reader since the awful pink and brown polka dot early stages of Dine & Dish (we’ve come a long way, baby) or if you are a brand new reader of Dine & Dish, thank you so much for being here. Your presence, support and love means the world to me! Thank you, thank you, thank you!…

Friends, I currently have two dilemmas in my life. #1 school starts in less than 2 weeks. #2 I am currently swimming in zucchini.

School starting in 2 weeks makes me sad. I love having my kids home during the summer and I really enjoy the more laid back schedule. We are trying to implement the “school time schedule” this week, but it isn’t going so well. After a couple of months of eating dinners late, staying up until the sun is more than set, and just kind of flying by the seats of our pants, the school schedule adjustment is going to be brutal. Brutal, I tell ya!…

I get slightly obsessive about things, especially when it comes to food and cravings. For example, last week I received an email from a friend about Cinco de Mayo and the very mention of that awesome holiday sent me into a “I MUST have Mexican food, now!” frenzy. Later in the week, I was at McDonald’s with my girls for a playdate and one of the employees was passing out free samples of their new McCafe Caramel Frappe. I had never had a cold coffee drink before and thought I would hate it. Wrong. I loved it and have had 4 since, including another one the same day I had the sample. I’m officially addicted.

This week, you will notice something on my menu plan that was on there last week – Baked Chicken Legs from Chaos in the Kitchen. My friend Amy turned me on to them one day last week, I added them to my menu the first time for Wednesday, and we just had them for the 3rd time tonight. Besides Wednesday night, I made them Saturday for lunch and then again tonight, for dinner. My kids love them, my husband and I love them, and I can imagine that they will be making an appearance on our menu at least once every week from now until the end of eternity. They are THAT good. Oh, and simple…which totally makes it the best deal ever!

In fact, if I had it my way, my menu plan this week would read “Baked Chicken Legs”, “Baked Chicken Legs”, “Baked Chicken Legs”, etc., etc. You get the drift. They have become an obsession.

In an effort to have my family not start growing feathers and walking around clucking and pecking at the ground from too many chicken legs, I’ve decided to add a tiny bit of variety to our menu this week. But just so you know, my wish, at least until the next craving hits, is really for these baked chicken legs.
