Every summer, I say I&#8217;m going to <a href="http://www.realsimple.com/holidays-entertaining/entertaining/seasonal-events/how-to-have-a-summer-solstice-party-10000001738546/index.html" target="_blank" rel="nofollow noopener">throw a Summer Solstice party</a>, and every summer Summer Solstice sneaks up on me and I totally miss it.</p>
<p>Summer flies faster than any other season of the year. Winter tends to crawl along, Spring flows along at a normal pace, Fall kicks in and always seems to short because Winter comes along right after, but summer? Summer goes by at lightening speed and before I know it, all the things I wanted to do with my kids while they are home gets pushed off until next year.</p>
<p>We actually made lists, the kids and I, of all the things we want to do this summer. Guess what one of my list items was? <a href="http://domesticreflections.blogspot.com/2008/06/how-to-throw-summer-solstice-party_26.html" target="_blank" rel="nofollow noopener">Host a Summer Solstice party</a> and yet, Summer Solstice was yesterday. Oh well&#8230; there is always next year, at least I hope!</p>
<p>One thing you don&#8217;t want to miss participating in this summer is the <a href="http://www.greatsteakchallenge.com/" target="_blank" rel="nofollow noopener">Beringer Great Steak Challenge</a>. You have until June 30th to submit your favorite steak recipe to Beringer and you could be chosen as one of the ten finalists to  compete in the Finale Great Steak Challenge grill-off held at beautiful  Beringer Vineyards in Napa Valley and broadcast on the Fine Living  Network. Wouldn&#8217;t that be fun? There is nothing quite like grilling up a great steak in the summertime!</p>

<p>I&#8217;m not having a summer solstice party this year, but if I were, this is one recipe I&#8217;d be serving up. Strawberry Mint Gelato&#8230;just like summer in a bowl!</p>

</strong></p>
<ul><span class="ingredient"></p>
<li>12 ounces fresh strawberries (hull removed)</li>
<li>3 Tbs finely chopped fresh mint</li>
<li>3/4 cup sugar</li>
<li>2 cups whole milk</li>
<li>1/2 cup heavy cream</li>
<li>1 teaspoon fresh lemon juice</li>
</ul>

<span class="instructions">In a blender combine the strawberries, sugar, mint and whole milk and  puree until smooth.</p>
<p>Add in the heavy cream and mix just enough to combine (you do not  want to whip the cream). Add in the lemon juice.  Refrigerate for at  least 4 hours. Refrigerating overnight is best because it will allow the  flavor to intensify.</p>
<p>Transfer the mixture into an ice cream machine and freeze according  to the manufacturer&#8217;s instructions. Serve at once with fresh cut  strawberries, if desired, or freeze for up to one month.</span></span></p>

You <a href="http://www.google.com/search?q=new+years+resolution&amp;ie=utf-8&amp;oe=utf-8&amp;aq=t&amp;rls=org.mozilla:en-US:official&amp;client=firefox-a" target="_blank" rel="noopener noreferrer">make your New Year&#8217;s Resoulutions</a>, which include things like &#8220;<a href="http://www.43things.com/things/view/649448/lose-weight-for-once-and-for-all" target="_blank" rel="noopener noreferrer">Lose the 10 pounds I was supposed to lose last year</a>,&#8221; and &#8220;<a href="http://www.43things.com/things/view/2156/go-to-the-gym" target="_blank" rel="noopener noreferrer">make it to the gym past the first two weeks in January</a>&#8220;. You are feeling really confident that <em>this</em> is the year that you aren&#8217;t going to fail on your resolutions. Then, without fail, your doorbell rings. You open it to find a sweet little uniformed girl with a smile so sweet it causes your teeth to ache. She appears innocent, but what <em>you</em> see is the devil hidden behind a green little jumper and girl scout badges. She happily hands you the 20 boxes of <a href="http://blog.girlscouts.org/2007/03/girl-scout-cookie-program-highlighted.html" target="_blank" rel="noopener noreferrer">Girl Scout </a>cookies you ordered way back in October and at that moment you see all of your New Years resolve vanish.</p>
<p>Why in the world do the Girl Scouts deliver their cookies in January? I would love to have them in December, when I&#8217;m pigging out anyway and have people over all the time to share them with. But, nooooo&#8230;. they have to come at the very beginning of January, just when you think you may have a chance for success this year.</p>
<p>Unlike some people, I cannot stick the cookies in the freezer and eat them only in emergencies. If they are in my house, they have to be eaten. My kids get to go on a cookie eating binge, eating cookies for breakfast, lunch, snack and dinner simply so I can get the darn things out of my house.</p>
<p>I have taken extra precautions this year so I can be mentally prepared for the Girl Scout cookie arrivial. I&#8217;ve discovered this tasty recipe from the back of the Andes Mint Baking Chips bag. These cookies taste so much like the Girl Scout Thin Mint cookies that I really think I&#8217;ve eaten enough of them to not be nearly as tempted by the real thing when it comes along.  We&#8217;ll see if it works or not. I&#8217;ll let you know after the little devil in disguise arrives.</p>

<li> 1 teaspoon <a href="http://www.recipezaar.com/library/getentry.zsp?id=7">baking soda</a></li>
<li> 1 teaspoon <a href="http://www.recipezaar.com/library/getentry.zsp?id=6">baking powder</a></li>
<li> 2 teaspoons <a href="http://www.recipezaar.com/library/getentry.zsp?id=350">vanilla extract</a></li>
<li> 2 large <a href="http://www.recipezaar.com/library/getentry.zsp?id=142">eggs</a></li>
<li>1 (10 ounce) package <a>Andes mint baking chips</a></li>
<li> 2 2/3 cups <a href="http://www.recipezaar.com/library/getentry.zsp?id=64">all-purpose flour</a></li>
</ul>

<ol>
<li><span class="recipetext">Preheat oven to 350°F.</span></li>
<li><span class="recipetext">Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed.</span></li>
<li><span class="recipetext">Add Andes Baking Chips and mix.</span></li>
<li><span class="recipetext">Add Flour and continue to mix until all ingredients are well blended together.</span></li>
<li><span class="recipetext">Cover and chill in the refrigerator for 45-60 minutes.</span></li>
<li><span class="recipetext">Spoon out approximately 1 oz of dough per cookie.</span></li>
<li><span class="recipetext">Form a ball and then slightly flatten.</span></li>
<li><span class="recipetext">Place on non-stick baking pans and bake for approximately 8-10 minutes.</span></li>
<li><span class="recipetext">Cool on pans for 2 minutes, then remove.</span></li>
