I know what you are thinking… peaches in October? Kristen! What’s up with that?

I know, I know… peaches are totally not a fall food, but I love them! I love them so much that I over purchased peaches this summer and ended up having to freeze a bunch. If you have peaches you froze and are looking for a nifty way to use some of them up, I’d like to suggest this Peach Slow Cooker Dessert recipe. …

Oh, you noticed? What gave it away? The fact that just about every recipe I’ve posted in the past few weeks has had fresh peaches as an ingredient?

I just can’t help it. The peaches this season are just so juicy and good! I have also used a significant number of paper towels this summer, wiping up all the juice that’s dribbling down my face. I’m a little impatient with my peach eating and instead of cutting them up to eat them like a true lady would, I’ve been diving right in and taking bites out of the peaches… knowing full well that I’ll end up a sticky peach juice mess. But again, so worth it. …

I nudged my husband. “Let’s get out of town… go someplace for the day.”

It’d be a happy day, full of picture taking, shopping for props at antique stores, prancing through fields while notes from The Sound of Music filled the air.

We all pile in the car… 45 minutes later than we had planned because that’s how it goes when you have four kids and try to get out the door. But all is good. We’re going to have a happy day… a whimsical, carefree, spontaneous road trip kind of day.

5 minutes into our trip, Leah is screaming because her seat belt is too tight. Ella and Jacob are fighting over space. Kelly is giving us a play by play of every ones wrong doings. I try to tune it all out. We are going to have fun, dammit!

20 minutes into our road trip, things have only gotten worse. The kids are in full sibling rivalry mode… every thing they do is annoying the other one. “Ella, stop breathing so loud!” “Jacob, stop kicking my seat!” Blah, blah, blah…

25 minutes into our road trip, the car comes to a halt. “Do we really want to do this?” my husband looks at me and asks. No… no we don’t.

We turn around and head home, much to the dismay of the wailing kids in the back. They come into the house and are sent straight to their rooms. If we aren’t road tripping, they are going to clean.

I make a beeline to my new blender and decide the reality of my fantasy at least deserves a cocktail.

So, no road trip with the family… but a delicious, creamy, peachy cocktail creation instead. Fantasy versus reality… and suddenly it’s not all that bad.

If you’ll recall, American Express launched the search for easy recipes to help celebrate their new American Express Blue Cash Preferred and Everyday cards. American Express had me send a call out to Dine & Dish readers for some of your favorite 6 ingredients or less recipes, and boy did you all come through!

I can say, I am so glad this was a random drawing situation and not a judging contest because there were so many delicious, simple recipes submitted. I am excited to have a collection of easy dessert recipes to turn to now anytime I have the need for something sweet and simple.

The winner, chosen by Random.org, for the $600 American Express Gift Card is Joyce from Ballwin, Missouri. Joyce has always been a stay at home mom / homemaker. Her children are now out of the house but she has 3 grandchildren who keep her busy. Joyce loves to read, play golf and travel.

Joyce’s winning recipe was an Easy Peach Dump Cake. She was introduced to this simple recipe by some ladies at church and she has been making it ever since. Thank you, Joyce, for submitting your favorite 6 ingredient or less recipe to help celebrate with American Express. I hope you enjoy your gift card!

This giveaway was sponsored by American Express. All opinions expressed are my own.

I’m going to be 100% honest with you as I was very skeptical of this recipe. 3 ingredients? How on earth can it be any good? I’m eating my words along with this Easy Peach Dump Cake because it is soooo good, especially for how simple it is. It is almost like a peach cobbler and goes very well with a scoop of vanilla ice cream or homemade whipped topping. I think it could also easily be made using fresh peaches in a simple syrup.

Yesterday afternoon, the two year old in my family had a meltdown… in the middle of the grocery store. Let me tell you, it was a lovely site. First, refusing to wear her shoes and then refusing to sit in the cart, my normally sweet and laid back daughter completely lost it. Running off, laying in the middle of the aisles and screaming at the top of her lungs, she really let everyone within a ten mile radius know that she was not happy. I would attempt to pick her up, and she would scrunch up her legs, pushing me away, and would scream even louder. Three kids, lots of grocery store trips, and this was my very first time to experience such a show firsthand.

Most sane mom’s would pick up their child and leave the store with their groceries un-purchased. Me? Nope – I continued to let her make a scene simply because I had these luscious, juicy, aromatic peaches in my cart and I couldn’t bare to walk out of the store without them. Women, who apparently have never had children or who were as terribly annoyed as I was kept giving me dirty looks in the checkout lane. But, as stubborn as my two year old, I refused to leave without my peaches.

And I can honestly say… all the dirty looks, all the built up frustration, all the cussing at my husband for traveling for work this week which lead me to go to the store with my three kids in the first place… all of that was well worth it when I took my first juicy bite.

In fact, I may even brave the store with the temper tantrum thrower again tonight. This simple recipe (even though my whipped lemon cream had a meltdown of its own) is worth any embarrassment I may face.
