So I wasn’t paying enough attention to your directions and “accidentally” shred about a 1/4 cup of onion into the recipe. It turns out (as many recipe whoopsies do) that it was a fantastic mistake! We are big onion eaters in my house and they were OUTSTANDING! Thanks for the recipe! 🙂

Made these earlier for my family, and they were great! I added some shredded carrot to the mixture, grilled them, and melted feta on top before serving. I LOVE how colorful they turned out, almost like a fiesta :). Wonderful recipe, thank you!
