Apple Cinnamon Cookies Recipe

A chewy fall flavored cookie full of cinnamon apples!

Ingredients

  • 1 cup butter softened
  • 1 1/4 cup packed brown sugar Imperial brand preferred
  • 1/4 cup granulated sugar Imperial brand preferred
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 Tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups all purpose flour
  • 1 cup fuji or pink lady apples peeled, cored and diced into small pieces

Instructions

  • Preheat oven to 350°F
  • In the bowl of a stand mixer, cream butter and sugars until well blended. Add in eggs and vanilla and beat on medium.
  • Combine the flour, cinnamon, baking soda and salt and add to the creamed mixture until full incorporated.
  • Turn off the mixer and fold in diced apples with a spoon or spatula.
  • Drop by rounded tablespoons, 2 inches apart onto silpat or parchment lined baking sheets.
  • Bake at 350°F for 11-13 minutes, or until golden brown. Let stand for 1 minute before removing to a wire rack to cool completely.
