One of the most annoying/challenging/predictable parts of living in the state of Kansas is the weather. People always say “If you don’t like the weather in Kansas… just wait!” It is so predictably unpredictable. One day this week we had temperatures in the 70’s. It was so lovely. Our entire neighborhood was out playing, chatting, firing up their grills and enjoying the warm sunshine beating down. By this weekend, we are supposed to have snow falling from the sky again. Yep – if you don’t like the weather in Kansas, just wait because something new will be coming along the next day….

I feel like such a traitor. We have the best little local coffee house in our suburb. It was the only little coffee house in our suburb. The Country Club Cafe is a family friendly place that has a small play area for the kiddos to hang out at while the mom’s sit around and chat and enjoy a nice cup of coffee. The owners of the coffee house give back to the community and seriously make you feel like you are part of a family right when you walk in the door….

Peanut Butter Perfection

I have never been a huge fan of peanut butter cookies. It isn’t that I don’t like the flavor of them… it is just that they are so inconsistent. You never know what you are going to get when you bite into a homemade peanut butter cookie. Is it going to be crunchy? Will it have peanuts in it or be nut free? Will it be soft and tender with a chewy center? You just never know….

Fiesta Chicken Pasta

This Fiesta Chicken Pasta from Kraft is a great, easy weeknight meal.

For so many people, cooking dinner is just another chore added to their long list of to-do’s during the day. I enjoy cooking dinner. Let me rephrase that… I enjoy cooking dinner if I don’t have three children under my feet bugging me to do things for them while I am trying to navigate the kitchen to cook something all 5 of us will like.

On my best nights, my husband comes home from work and sweeps the kids away for awhile so I can make dinner in peace. Cooking dinner under those circumstances is my “me” time. It’s the time where I can be in my element. Where I can think about my day without the distraction of the children interrupting my thoughts. It’s great, but I know my husband has his limitations. He’s usually been at work for 10 hours and would probably like some “me” time as well. On nights like those, I feel a little oomph of success when I can have my “me” time in the kitchen and it takes roughly 30 minutes from start to finish to create a nice meal….
