Ingredients
1/2poundfresh mushroomschopped
1/4cupeach chopped onioncelery and carrot
1can of whole kernel sweet corndrained
1/4cupbuttercubed
1/2cupall-purpose flour
5-1/2cupschicken broth
1teaspoonpepper
1/2teaspoonwhite pepper
1/4teaspoondried thyme
Pinchdried tarragon
1/2teaspoonhot pepper sauce
3cupshalf-and-half cream
2-1/2cupscubed cooked chicken
1tablespoonminced fresh parsley
1-1/2teaspoonslemon juice
1/2teaspoonsalt
Instructions
In a Dutch oven or large stock pot, saute the mushrooms, onion, celery, carrot and corn in butter until tender. Stir in flour until blended. Add the broth and seasonings; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
Stir in the cream, chicken, parsley, lemon juice and salt; heat through (do not boil).
