People are so passionate about their cheesesteaks, aren’t they? I’m not about to call these Philly Cheesesteak Lettuce Cups. The last thing I want to do is offend someone by not making an authentic Philly style cheesesteak. Besides, the only time I’ve had a cheesesteak in Philly was about 17 years ago. I remember there being cheese sauce instead of regular cheese. Is that authentic? What makes cheesesteaks authentic Philly cheesesteaks? I really have no idea, to be honest….

Here’s a truth you need to hear…your dad wants The Kansas City Steak Company Steaks for Father’s Day. It’s possible he hasn’t told you yet. It is even quite possible he doesn’t even know this is what he wants yet, but trust me, I know.

If your dad loves steak, and let’s face it…what dad doesn’t…he will absolutely flip over the mouthwatering flavor, high quality, and tenderness of the steak from The Kansas City Steak Company. Each steak we’ve grilled from The Kansas City Steak Company has been so thick and juicy and full of flavor, we’ve mmmmmmm’d all the way through each meal. So, like I said, I know this is what your dad wants for Father’s Day. If you agree, you’d better hop on over to the Kansas City Steak Company website and place your order for these delicious steaks delivered right to his doorstep. (Use the code DINEFD17 for 15% off your order here.)

In the meantime, I’m sharing a Rosemary Cream Sauce recipe that tops steak so beautifully. In addition, I’m also giving away one Welcome to KC Sampler Combo to one lucky Dine & Dish reader. Man… I’ve had the hardest time getting back into the swing of cooking and blogging this year. That’s probably obvious by my lack of blog posts lately, isn’t it?

The problem is that unlike my slow start to 2014 with reading, I have already read so many great books this year! The kind that you don’t want to put down and just want to ignore life and read all the time. I haven’t been totally ignoring my family and reading… but I have ignored going to the grocery store and cooking and blogging for the most part and instead have been devouring these books! I’ll write a post about the books at the end of January, but if you are curious what they are…this book was a page turner. I couldn’t put it down! Along the same lines, I couldn’t wait to get to the end of this book so I could see how it unfolded. This book was incredible and so well written, which shouldn’t surprise me since I love everything by this author. And this book…well, I listened to it on audio and loved the narrators and it kept me on the treadmill, even when I was tired of running. They were all so good!

So if you are looking for some really good books to start your year of reading off on the right foot, I highly recommend those ones. I’m so excited as I have a stack of books to get through that I think are going to be really great. So I may not be blogging, but I am doing my due part to read books so I can recommend them to you 🙂 You are welcome. …

Friends… I am finally manning the grill!

If you’ve been following Dine & Dish at all over the past few years, you know that grilling has not been my thing, despite really wanting to learn how. It wasn’t because I lacked eagerness. It was because I just so happened to like being alive and was terrified of figuring out all the tricks to turning on our beloved “ghetto grill”.

Well, just a few weeks ago we received a new Weber grill and it is mine all mine! Since then, I’ve been attempting to teach myself how to grill, and if I can take a moment to humble brag, I’m pretty darn good at it!…

Of those three I believe a big thank goodness is in order for the lack of Kardashian sisters. I do, however, wish I was a hop, skip and a jump away from an ocean/beach and I wish I could get fresh avocados that tasted like the ones I get shipped from California Avocados at my local grocery store.

This past month when I was out of avocados and awaiting my ambassador shipment from the California Avocado Commission, I was craving fresh avocados like crazy. A good friend of mine said “You do realize, they sell avocados at the grocery store, right?” Of course I know they sell avocados, but they don’t sell California avocados… and once you’ve had avocados fresh from the orchard in California, you can’t go back to what they sell here in Kansas stores. It just isn’t the same.

Luckily, there will hopefully always be companies that deliver California avocados straight to your doorstep. If you are in the midwest and want to know what real California avocados taste like, order some up today. Better yet, if you are a neighbor, stop on by… my shipment just arrived and I’d love to share an avocado with you! …

I will go into all of that another day, but I was pleasantly surprised when Nick’s family welcomed me in with open arms, not really caring at all about the baggage I had. They welcomed me without giving it a second thought. I can tell you this… they would have totally shunned the relationship if I was one thing, and that is a vegetarian! Being beef farmers, I think having a vegetarian in the family would have been a total deal breaker.

Last week I was contacted to be one of six food blog “ambassadors” for a new weekly challenge that has launched called “Beef – What’s for Dinner Wednesdays“. Each week, the Beef. It’s What’s For Dinner Facebook fan page will be updated with a new recipe to make. The challenge is to make the recipe and post your results on the Facebook fan page. Each person who participates will be entered into a drawing to win one of several really cool gift baskets which include The Healthy Beef Cookbook (which I’ve been using for months now and love!), a set of Crate & Barrel Grilling Tools, Sur La Table mini steak thermometers, a reusable shopping bag and other items to help you shop for and cook healthy beef meals. These drawings are happening each week (with several winners chosen each week) so your chances of bringing one of these cool prize packages is great! Check out the Beef. It’s What’s For Dinner fan page for more details!

This week’s recipe was a Cajun Beef Southwestern Salad. I made a few changes. First of all, we aren’t big fig fans around here, so I totally omitted that. Plus, I used sunflower salad nuts instead of pistachios, simply because that’s what I had on hand. Oh, and I used Romaine lettuce… again because it was what I had in the fridge. The salad had quite a kick to it and I loved it. The kiddos weren’t big fans, but I think that is because it was too zesty for them. I LOVED this dressing and can envision more salad creations to use it on!

Make sure you check out the Facebook fan page to read all the details about how you can start participating. Next week’s recipe sounds so delicious… East Meets West Burgers. Yum!

When you get a moment, head over to the other ambassador blogs as well!

You all are probably starting to think that I should change my blog name to Dine and Whine instead of Dine and Dish, aren’t you? Have I been crabby the past couple of posts or what? Sorry to bring you all down, but thank you for pulling me back up. The comments on my last post about the restlessness I am feeling really put things into perspective for me. The post struck a chord with many of you and your personal accounts and advice are so appreciated.

I do not have a lot to say today (first time for everything, isn’t there?) but I have been holding on to this recipe for so long and keep forgetting to post it. This is a Recipezaar recipe… and was a spur of the moment try for me. We always have a lot of minute steak in our house and finding creative things to do with that type of steak can be difficult. This recipe for The Ultimate Steak Sandwich has to be the best use of minute steak that I have found. If you try it, I hope you enjoy it as much as we did.

Oh – and PS… Adopt a Blogger 2 bloggers… I haven’t forgotten about you! I promise we’ll get the second batch up and running in March. Please encourage the veteran blogs that you visit to participate because right now we are at about an 80 to 20% ratio, with new bloggers being on the heavy side. Can’t wait to get started with you! Adopt a Blogger 1 bloggers, I’d love to hear how things are going with your match-ups. Give me a few days as I work from home and my inbox is always flooded…but I will reply!
