A Little Lemon {Recipe: Lemon Basil Bruschetta}

There was a time when I would sign up to bring anything to a party BUT an appetizer. I’ve never been very good at appetizers, until I discovered the ease and versatility of Bruschetta.

This Lemon Basil Bruschetta was the perfect idea to take to my friend, Liz’s, Virtual Baby Shower! I’m sure you know Liz from The Lemon Bowl, right? She’s having another baby boy very soon and a few of her friends and I decided to throw her a virtual baby shower to celebrate!

I’m all for baby showers and people having babies and all, but I really must confess that I’m a little annoyed with Liz for having another boy… she’s kind of got the market on cuteness with her first son, Asher. I’m not sure what she’s trying to pull bringing more cute into the world. Sounds like some kind of crazy blog stunt to me! (That’s Asher, hanging out with me in Michigan this summer… little did I know at that point that he’s kind of a ladies man and I’m pretty sure has long forgotten about me by now. I still love him though!)…

Baby Love {Recipe: Neapolitan Cream Filled Cupcakes}

I remember the day we found out our first baby was going to be a boy. I, of course, was happy to find out he was healthy but I was beside myself with worry about what I’d do with a boy. I am a girly girl, all the way around, and for some reason just had it in my head that if I was blessed enough to have kids, they’d be girls. The idea that I’d ever be a mom to a boy never crossed my mind.

Jacob was born, and little by little I was given the opportunity to discover how special little boys are. They are different than girls, that’s for sure, but just as sweet, lovable and fun as girls. Having my first born be a boy has been a really great experience and now I wouldn’t have it any other way.

Much to Jacob’s dismay, babies 2, 3, and 4 were girls. Oh, I got my girls alright, but also had the chance to give them the opportunity to have something incredibly special… an older brother to always look out for them (which, we’re still waiting on to happen, but I’m sure it will, someday, right?)…

The Connector {Recipe: Waffle Cone Fruit Cups}

My friend DeLynn is one of those friends who is great at “connecting” with people. She understands the priority of having and maintaining female friendships and because of that, she has a gift for bringing people together.

DeLynn, my friends Terri, Whitney and I have been friends for 9 years now. Although our lives have all changed and schedules have gotten busier over time, DeLynn always manages to bring us together in some way. We call ourselves “The Houlihan Girls” because we meet at a restaurant by the same name once a quarter. If we fail to put something on the calendar when we are together, DeLynn makes sure to coordinate something soon after so that we all have our girl time penned in.

Our time together is always refreshing…sharing, laughter, tears and love. I value the friendships of these ladies so much and appreciate the place they have in my life. Even more so, I am thankful for DeLynn’s ability to keep us connected…through emails during the week, phone calls for this and that, and making sure we have our “girlfriend time” on the calendar, regularly.

DeLynn had us over for brunch this past weekend where she made her yummy Cinnamon Rolls, a delicious Starbucks copycat Caramel Apple Cider and these adorable Waffle Cone Fruit Cups with a Sweet Sour Cream Sauce. I thought the Waffle Cone Fruit cups would be an excellent thing to “bring” to a Virtual Baby Shower for my friend Aimee from Simple Bites.

Aimee is adding a sweet baby girl to her family of boys any day now. I can’t get together with Aimee in person right now, but I hope that my well wishes and excitement for another mama to experience the wonderful world of baby girls shows through the miles. Congrats to your family, Aimee! There are a lot of incredible moments ahead for you.

Recipe: Waffle Cone Fruit Cups with Sweet Sour Cream Sauce (From my friend DeLynn)

This isn’t really a recipe. It is more so a clever idea for serving fruit and fruit dip in a unique way. Perfect for a party!

Fresh fruit, such as strawberries, blackberries, blueberries, chopped apples, banana slices, etc
Large waffle cones
Sweet Sour Cream Sauce (mixture of 1 cup sour cream, 2 Tablespoons brown sugar and 1/2 teaspoon vanilla)

Fill each large waffle cone with fresh fruit. Spoon sweet sour cream sauce over the fresh fruit. Serve and enjoy!

Baby Boy Joy {Recipe: Oven Baked Cinnamon Apples}

9 1/2 years ago, we welcomed our first baby into our family. It seems like such a long time ago, looking back. I remember specific moments with Jacob that I don’t remember with my three girls. There’s the first time he fell asleep in his high chair with a mouth and face full of food. My awe and surprise at the first time his chubby little hands reached out for a toy hanging on his infant carrier. My heart melted in an instant the first time his little voice repeated back the “I love you sweet baby” that I’d say to him every night as I put him down to sleep. He is my first, and as much as I do love my girls, Jacob will always have an extra special place in my heart because of that.

My dear blogging friend, Maria, and her husband Josh, are getting ready to welcome their first baby into their “pod”. A sweet little boy. I am so excited for Maria to experience all the firsts that a mom gets to experience. I won’t go on about the eye opening firsts that I remember as a new mom, but I will tell Maria that she is in for a joyous and exciting and sometimes challenging ride. Being a parent is something I feel so blessed to do (although if you would ask me on most days, I’m ready to pull my hair out because of the kids typically).

Maria – take lots of pictures, treasure the moments, and enjoy being a mama to your sweet new bundle. Congrats to you and ~~Walter Dan~~ Josh. From our family to yours, much love and happiness. I can’t wait to meet him!

Recipe: Oven-baked Apples

4 tart apples, such as Fuji or Jonagold
½ cup brown sugar
4 Tablespoons butter
2 teaspoons ground cinnamon

Preheat oven to 350°F.
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through.
Stuff each apple with 2 Tablespoons brown sugar and 1 Tablespoon butter.
Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven for 15 minutes, until apples are tender.
