I love traditions… especially around the holidays. At Thanksgiving we always have my late-grandma’s banana cream and chocolate cream pie. These buttery dinner rolls have been gracing our Thanksgiving table for years. With every new marriage, child born and merger of families, new traditions are brought in to the fold. A flavorful Fall Vegetable Risotto recipe inspired by a dish served at the Chef’s Table aboard the Ruby Princess cruise ship.

I was thinking back this week to many of the most memorable dinners out I’ve had, and I discovered they almost all have included risotto of some kind. Apparently, I have a great fondness for risotto, which is odd because I rarely make risotto at home! Risotto is a simple (yet a tiny bit time consuming) dish that tastes good with so many different mix ins and foods.

Do you ever pause to think about the farmers behind the food you eat?

I often think about the fact that no matter what time of day it is, whatever the weather, and even on holidays, there are dedicated farmers out there working hard to produce the food that is on our table. When it is negative 10 outside, with an even more fierce windchill, I often think of The Foster family, and the milking that has to happen, despite the bitter temperatures. Along with the Foster’s, there are more than 9,000 dairy farm families just in the midwest who are committed to providing us with real, fresh and naturally nutrient foods to fill our table. How many of our Thanksgiving dishes wouldn’t be possible without the dedication of the midwest dairy farmers? Just about all of them! My grandma Sumner was the pie maker in our family. She showed up to every holiday with 2 of each flavor of pie… she had pumpkin and banana cream and chocolate cream and pecan and coconut cream. She always made sure that everyones special pie wishes were fulfilled. She was pretty special that way.
