People are so passionate about their cheesesteaks, aren’t they? I’m not about to call these Philly Cheesesteak Lettuce Cups. The last thing I want to do is offend someone by not making an authentic Philly style cheesesteak. Besides, the only time I’ve had a cheesesteak in Philly was about 17 years ago. I remember there being cheese sauce instead of regular cheese. Is that authentic? What makes cheesesteaks authentic Philly cheesesteaks? I really have no idea, to be honest….

Have you all heard of “crack slaw” or what I’m calling Beefy Asian Slaw? My friend Aggie was telling me about how it’s a great low carb meal, but I hadn’t heard of it before. When I told her I wasn’t a big fan of coleslaw, she mentioned it wasn’t really a slaw recipe, but more of a great Asian inspired type meal. Immediately curious, I looked up a crack slaw recipe and decided to give it a try. I am so glad I gave this recipe a chance because it was so good! Like, make it at least once a week, good! …

My friend Aggie and I have been on a bit of a savings spree (after too many spending sprees). We’re getting a lot of joy out of texting each other with updates on our what we’re saving money on each day. “I cancelled my house cleaners and am saving $300 a month!”. “I cancelled my gym membership and am saving $90 a month!”. “I finally cancelled that ABC Mouse subscription that my kids haven’t used in 5 years.” (I wish I was kidding on that one… why do they make it so difficult to cancel ABC Mouse?).

It’s motivating to have a partner in crime when trying to save money, isn’t it? In fact, each time she texts me something she’s saving on, I start looking to see what the next thing is I can save money on. …

Adding California Avocados to Beef and Broccoli Stir Fry may not be traditional, but it certainly is delicious!

I love stir-fry. Seriously. I could eat a stir fry of some kind every, single day if I think I could get away with it. There is just something about the blend of fresh vegetables, sauces and whatever ingredients you have on hand all melded together to make a delicious meal. Stir-fry is easy, adaptable and just so good!

When my friends at California Avocados challenged me to create a recipe that wouldn’t traditionally have avocado in it, but create it with avocado, I knew I wanted to do some sort of stir fry. Since Beef and Broccoli Stir Fry is a favorite, I decided to experiment with that and the results were delicious! Why hasn’t beef and broccoli stir fry had avocado in it all along?…

This post brought to you by Hass Avocado Board featuring Hass Avocados. All opinions are 100% mine.

We’re kind of a fan of the avocado around our house. Avocado’s are one of those things that just seem to “ooomph” up an ordinary recipe, don’t you agree?

A chicken sandwich sounds much more appealing when you top it with slices of fresh avocado. A salad takes on a whole new flavor when wedges of avocado are thrown on top (or better yet, drizzled with Avocado Ranch Salad Dressing).

Hass Avocados asked me to share some of my favorite ways to use avocados. From a traditional guacamole to something a little less traditional, like avocado fries, we love to use avocados in a variety of ways.

Hass Avocados has recently launched Kick Off with Hass Avocados Recipe Contest, which gives avocado fans the chance to share their favorite recipes and win! If you think you have a winning avocado recipe, share it in the Kick Off with Hass Avocados Recipe Contest and you could win a trip to the Rose Bowl Game or some other great prizes!

For recipe inspiration, be sure to check out the avocado recipes index on the Hass site. In the meantime, here is one of our favorite and simple dinnertime recipes, made even more special when topped with a fresh avocado.

Recipe: Beef Tostadas

8 Fajita sized flour tortillas

4 tablespoons vegetable oil

1 15oz can refried beans

1 pound lean ground beef

3 tablespoons prepared taco meat seasoning (Recipe found here)

1/4 cup warm water

1 can Bush’s Black Beans, drained

4 cups chopped, loose lettuce (we like to use a simple Spring Mix)

1 cup Monterey Jack cheese, shredded

1 cup mild cheddar cheese, shredded

1 small tomato, diced

1 avocado, diced

Heat vegetable oil in a pan over medium heat. Heat until bubbly but not smoking.

One at a time, fry tortillas in the oil, watching carefully as to not burn. Fry each tortilla until puffy and light brown, approximately 30 seconds on each side. Remove from pan and lay on paper towels to absorb the extra oil. Set aside.

Cook refried beans over medium heat. Heat until warm and cooked through

Brown your ground beef in a large skillet. Once cooked add 1/4 cup warm water, 3 tablespoons of taco seasoning and the can of black beans. Stir continuously, increasing heat until mixture comes to a slow boil. Remove from heat.

For each tortilla: spread a thin layer of refried beans on the cooked tortilla, top with hamburger / black bean mixture, a small handful of lettuce, a pinch of Monterey Jack cheese, a pinch of cheddar cheese, diced tomato and diced avocado. Serve and enjoy!

Nora from Fuss Free Recipes! Congratulations, Nora. You’ll love it, I promise!

I’ll be kicking off another great giveaway next Tuesday, so stay tuned!

Another way you can win a really cool prize package is by participating in What’s For Dinner Wednesdays. My Cajun Beef Southwestern Salad post last week gave all the details, but in case you missed it, here they are.

Last week I was contacted to be one of six food blog “ambassadors” for a new weekly challenge that has launched called “Beef – What’s for Dinner Wednesdays“. Each week, the Beef. It’s What’s For Dinner Facebook fan page will be updated with a new recipe to make. The challenge is to make the recipe and post your results on the Facebook fan page. Each person who participates will be entered into a drawing to win one of several really cool gift baskets which include The Healthy Beef Cookbook (which I’ve been using for months now and love!), a set of Crate & Barrel Grilling Tools, Sur La Table mini steak thermometers, a reusable shopping bag and other items to help you shop for and cook healthy beef meals. These drawings are happening each week (with several winners chosen each week) so your chances of bringing one of these cool prize packages is great! Check out the Beef. It’s What’s For Dinner fan page for more details!

The recipe for this past week was really different, but so good. I am normally a pretty fuss-free burger lover, liking seasoning and cheese. The East Meets West Burger has really opened my eyes to being a little more adventurous with my burger making!

For the recipe and to join in on the weekly giveaways and fun, head over to the Beef. It’s What’s for Dinner fan page. Join in on the discussion, make and review the recipes, and enter for the chance to win some great prizes each week!

The other program ambassadors did some great things with these burgers. Check it out!
