I love this time of year…when the last of the summer heat starts to fade away and the cooler temps make an appearance every now and then, giving us a taste of what’s soon to come. You all know I adore summer, but as soon as school is back in session, I’m ready to move on to days of open windows, flannel shirts and light, cozy blankets. There’s just something about fall that makes me really happy….

Learn how the new Alexia Premium Vegetable Sides are changing the way we do dinner and enjoy this Easy Baked Shrimp over Butternut Squash Risotto recipe.

The Thanksgiving holiday is over and I’m sure many of you are like me and craving some healthy “re-set” foods. Let’s just say I went way over my points limits one too many times over the holiday weekend. Weigh in on Saturday was not pretty, but it’s done, and I’m back in a healthy mindset today.

You may be wondering why I would share a recipe that includes creamy, cheesy, delicious risotto if I’m back on the health focused train? Because, friends, this is butternut squash risotto, one of Alexia’s newest premium vegetable side dishes! This Butternut Squash Risotto is a much healthier alternative to the typical starches you find on our dinner table. Plus, it’s Gluten Free and only 3 points per delicious serving. You won’t miss the starch when you add these new vegetable side dishes from Alexia to your dinner table….

A simple Roasted Vegetables Recipe, a family favorite almost too simple to share.

Sometimes I forget why I started this blog. I get caught up in the business of it… the money making, social media-ing, sponsor touting, craft honing, etc. I forget that the reason I started Dine & Dish almost 10 years ago was to have a space on the web to leave legacy behind for my kids. I wanted to create a place where they could always turn to to get a taste of home, no matter how far away they were. My focus was not to see what special words I could use to get to the top of a google search, or picture I could create to get the most likes and shares on Facebook, but instead my focus was to an audience of 4…the kids I’m raising today.

So, when I share recipes like this roasted vegetables recipe, I feel a little silly. I mean, I understand roasted vegetables are not a difficult thing to make and many people know how to make them. However, my 4 kids don’t yet, and someday in the future they may want to know how their mom made the roasted vegetables we have so often for dinner, so I’m going to share it here….

Are you looking to achieve fluffy omelet making perfection? Well, I have a few tips and tricks to help you along with an awesome veggie omelet recipe. Plus I’m sharing some of my favorite Kitchen Essentials from the store, Tuesday Morning!

When I was first learning to cook and stocking my own first kitchen, I thought that in order to be a great cook I needed all the gizmos and gadgets out there. If I saw it at a store or on the Food Network, I needed it. It was obviously the missing link between the great cooks on TV and me, right? Wrong. I soon discovered that it isn’t all the gizmos and gadgets that make you a great cook. It’s lots of practice and knowing how to use certain essential tools the right way that make you a great cook.

I remember attempting to make omelets for the first time and failing miserably. I bought a special omelet pan thinking that would help, and it didn’t at all. My omelet turned out to be an over stuffed, torn up, nasty mess.

I’ve since wised up to the fact that a well stocked kitchen doesn’t mean I need every gadget in the land. In fact, if you came into my kitchen today you would notice that aside from a few small appliances, I have very few gadgets. My kitchen is stocked with the most efficient, multi use essentials necessary. If it’s a one purpose product, I doubt you’ll find it here. Investing in some quality tools is what’s most important. You can head over to the Tuesday Morning blog to see what I consider to be some of the most essential things in my kitchen – some of these things I couldn’t live without!…

Man… I’ve had the hardest time getting back into the swing of cooking and blogging this year. That’s probably obvious by my lack of blog posts lately, isn’t it?

The problem is that unlike my slow start to 2014 with reading, I have already read so many great books this year! The kind that you don’t want to put down and just want to ignore life and read all the time. I haven’t been totally ignoring my family and reading… but I have ignored going to the grocery store and cooking and blogging for the most part and instead have been devouring these books! I’ll write a post about the books at the end of January, but if you are curious what they are…this book was a page turner. I couldn’t put it down! Along the same lines, I couldn’t wait to get to the end of this book so I could see how it unfolded. This book was incredible and so well written, which shouldn’t surprise me since I love everything by this author. And this book…well, I listened to it on audio and loved the narrators and it kept me on the treadmill, even when I was tired of running. They were all so good!

So if you are looking for some really good books to start your year of reading off on the right foot, I highly recommend those ones. I’m so excited as I have a stack of books to get through that I think are going to be really great. So I may not be blogging, but I am doing my due part to read books so I can recommend them to you 🙂 You are welcome. …

I’ve lacked interest in cooking and photographing and even writing… nothing blog wise has been giving me that spark. Personally, I’ve been having a blast with my kids and enjoying the heck out of summer, but when it comes to the “should dos” versus “want to dos” the “want to dos” are definitely winning.

I’ve felt guilt though… I love my blog and sharing recipes and life moments with you all. I should WANT to come here often and cooking has always been a passion of mine…but instead of cooking and blogging, we’ve been eating out all the time or eating quickly thrown together, just get it done, meals.

It became very apparent to me recently that I needed to find that spark of inspiration again and luckily the stroke of inspiration came… thanks to Zombies and a baker named Joy, of all things!…

I’m calling it “Two Handed Coffee Hour” – inspired by a blog post on Over The Sycamore where Ashley talks about how drinking your coffee with two hands forces you to slow down and enjoy the moment a little more. I hope my friends who come are enjoying this respite in the week as much as I am!
