Pumpkin Eggnog Bread Recipe with Creamy Eggnog Glaze

Friends, we need to talk about eggnog. Specifically, where you are on the love / hate scale with it?

Eggnog is one of those things where each year around this time, I get incredibly tempted by the freshly stocked shelves of eggnog. Things go down exactly like this…

  1. I purchase a 1/2 gallon of eggnog
  2. As soon as I get it home, I have one small glass
  3. As soon as I finish drinking that one glass, I remember I really don’t love eggnog
  4. I spend the next week using my eggnog in recipes, because I do really like the flavor of eggnog, just not actual eggnog itself.

So, given the scenario above, you can hopefully understand why over the next couple of weeks you might see a few more recipes using eggnog as an ingredient than usual. I fell prey to the temptation and now need to do my penance, by creating some tempting recipes to use my annual eggnog up.

Creamy Eggnog Glaze Recipe

This Pumpkin Eggnog Bread with Creamy Eggnog Glaze is so flavorful and moist…tasty on its own, but the star of this little shindig is the glaze. Oh wow. It’s creamy and sweet and has just enough eggnog flavor to give it that special boost for the season. Tempted? You should be. Once you give this a taste you may run out and buy a jug of eggnog simply so you can have an excuse to use it up with this recipe!

Personalize a coffee mug by using a sharpie marker and baking itBefore I share the eggnog pumpkin bread recipe with you, I have to give a shout out to my friend Ali from Gimme Some Oven for giving me this sweet and thoughtful coffee mug. She found the idea on Pinterest (take a Sharpie marker, decorate your mug, and bake at 350° for 30 minutes, and voila… you have an adorable, personalized mug!) Pumpkin Eggnog Bread Recipe with Creamy Eggnog Glaze

Pumpkin Eggnog Bread with Creamy Pumpkin Glaze

A holiday favorite is created when you combine pumpkin and eggnog for a quick bread treat sure to please.

Ingredients

For the bread:

  • 3/4 cup butter softened
  • 2 cups granulated sugar
  • 2 eggs
  • 1/2 cup eggnog
  • 1 15 ounce can pumpkin puree
  • 1 2/3 cups cake flour (I use this substitute recipe
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 Tablespoon vanilla

For the glaze:

  • 1 cup powdered sugar
  • 1 Tablespoon butter. softened
  • 4 Tablespoons eggnog

Instructions

For the bread:

  • Preheat oven to 350°F
  • Place butter, sugar and eggs into a large mixing bowl. Beat on medium speed until combined.
  • Add eggnog and pumpkin, continue to beat on medium speed until well blended.
  • Slowly add cake flour, baking soda, pumpkin pie spice and vanilla. Continue until all ingredients are blended.
  • Spray two 9" loaf pans with cooking spray. Pour batter into prepared pans and bake for 45-60 minutes or until knife inserted into the middle comes out clean.

For the glaze:

  • In a medium bowl, combine all ingredients. (You may add more eggnog for a thinner consistency glaze).
  • Once loaves of bread are cooked, remove from pans and top with eggnog glaze.

    To my Father eggnog is a sign and a holiday tradition. A small glass of eggnog with a little bourbon. Dad’s never been much of a drinker but he always brought it out to toast the holidays.

    This bread looks delicious. I imagine the flavors are wonderful.

    I LOVE eggnog!! Love it so much in fact that I am frequently the only person necessary to finish the one quart that I buy every year. I may use the rest of the quart to make this lovely sounding pumpkin bread. OMG, this sounds yummy!! 🙂

    I’m not an eggnog fan… hubby likes it, but doesn’t adore it. My mom likes it and I can palate the way she drinks it best – she mixes about half eggnog and half milk in a glass. (of course she usually gets pumpkin spice eggnog – which I’m sure would go great in this bread!)

    I love the flavor of eggnog as well but my experience with the store bought ones has been less than desirable to say the least, although I had a cup at a party once that was the host’s secret homemade recipe and it blew me away. I wish I had that recipe now!

    I like eggnog flavor, but I find that I do the same thing you do: drink a small glass with just OHSOMUCH anticipation and then just use it for the flavor in other stuff. This bread would probably be downed in about 5 minutes flat by yours truly!

    Bleh, eggnog. Not a fan. It looks like I’m in the minority on that.

    My dad pops some rum into it, which might improve it, but you can improve a lot of things with rum and I’d rather put my rum into something else.

    I love eggnog and have no trouble consuming a half-gallon. Trouble is I don’t need to be drinking eggnog. This bread sounds delicious!

    This made me giggle. I am not a fan but my hubs is & the kids love it. So hubs buys it & then says he loves it until the guilt sets in. He says that he would drink it all season if it didn’t have 1,789,465 calories in each sip. 🙂 We bought some & then I used it for cooking. That recipe come later this week.

    So as I was reading this post, I thought it was a lesson on self restraint and was so impressed with your “just one glass” motto. Then I kept reading and realized it’s because you hate egg nog. LOL. PS: I wish I hated it. 🙂

    Kindred spirits on the forget-we-don’t-love-eggnog thing. heh We usually buy the “light” version. It’s hard to find around here and sells out pretty quickly, but it actually tastes better to me. Not soooo rich and gooey.

    This eggnog situation is so so true. I too feel like I would enjoy eggnog, or rather should, but I really don’t. But I am fairly sure I would like a bread or cake made with eggnog. That only makes sense. And it is so very sweet, the mug, I love it, and the thoughts with it. It is perfect for your shots of coffee to brighten the day.

    I am definitely on the don’t like eggnog camp. Probably from growing up lactose intolerant – and still not able to handle a ton of dairy now – and the thought of egg in a drink grossed me out, I just was never a fan. I also have a friend that believes eggnog needs its own season. He buys his first GALLON in September. And I think his rum to nog ratio in his glass is about 80:20, so really for him drinking egg nog is just an excuse for more rum. He loves eggnog, me not so much, however,baked goods using it always taste amazing. My mom makes a pumpkin eggnog pie that’s surprisingly good. For pie (I am also not really a pie fan but that’s another story. This bread looks really good, like everything you make. And I LOVE the mug – yeah pinterest!

    This bread looks so yum! I am with you I love the taste and smell of eggnog but just to drink it straight up…it’s like drinking snot. ; /ewe! I have a bread pudding with caramel sauce my family loves, and an eggnog cocktail that is killer going to have to get me son NOG!

    Eggnog bread sounds marvelous. I love eggnog, but since becoming diabetic I cannot drink sweet things. I CAN however eat a bread like this without difficulty. I will certainly be trying this at some point. Great idea.
