A simple Bean and Cheese Queso recipe featuring Bush’s Chili Beans.

I recently realized I do everything a bit backwards on my blog. While everyone has been posting their favorite super bowl recipes, I wait until the day after to share what I brought instead of what I would bring. I must be such a disappointment to those of you who plan ahead and scour the internet for the current trends.

I’m apparently trendless around here… only participating once things seem to be well out the door. This is not on purpose at all… it’s just how my life works. I have no need for a house full of Super Bowl appetizers unless I’m actually going someplace that requires appetizers. Just like you probably won’t see a bunch of Valentine’s recipes around here until after our big Valentine’s dinner. The last thing my thighs need is to be tempted by some of my favorite foods,  simply to provide SEO related content for you.

With that said, here’s something to bookmark (or I guess Pin is what we do now, right?) for NEXT year and your Super Bowl celebration. Bush’s Chili Bean Cheese Queso using Bush’s Kidney or Chili Beans. I made this for a Super Bowl party we went to last night, and case in point… part of it was gone before we even left the house. I have no restraint, whatsoever.

This isn’t your traditional type of queso recipe. Don’t get me wrong…it’s incredibly cheesy. But the Chili Beans are the real star of the show.

Bush's Chili Bean Cheese Queso

Recipe: Chili Bean Cheese Queso

A comforting and cheesy bean queso, perfect for dipping!

Ingredients

  • 8 ounce block cream cheese
  • 16 ounce can Bush's Red Beans or Kidney Beans drained
  • 1 14.5 ounce can diced tomatoes
  • 1 ounce chili seasoning
  • 1 1/2 cups shredded cheddar cheese
  • Tortilla chips for serving

Instructions

  • In a large skillet over medium heat, melt the cream cheese.
  • Reduce heat and add Bush's Red Beans, dice tomatoes and chili seasoning. Stir until well combined.
  • Once heated through, add shredded cheddar cheese. Stir until melted.
  • Serve hot with chips.

    You are not alone Kristin. My blog is about what I prepare for family and friends…and I don’t prepare foods weeks in advance so that I can have them be popular online prior to an event…they ARE the event. 🙂

    Besides…this looks good for anytime; who needs a football game anyhow?

    Oh, Kristen. As always, I love you for being real, authentic, and, well, you. I have thought a lot about that very thing recently. Summer’s illnesses and surgery were so eye opening to me. In the end, the whole experience was a gift that I believe was God-given because it made me realize what is truly important. For me, it is making sure that I spend every spare minute with my sweet family, soaking up all of the memories. Yesterday, I was taking Super Bowl pictures, and Sean was trying to make the food look pretty for me. I told him, “No worries. These pictures are just for us!” It was quite freeing, actually. 🙂

    Last night I made sort of a copycat Chili’s Queso, which is really really good, but calls for a whole pound of Velveta. (gag). I love the look of this much better because it greatly reduces the amount of processed food. Plus I love Bush’s Chili beans. We used them all the time around here.

    And, um, yeah. I’m always posting Christmas cookies on Christmas Eve, etc. etc. Somehow, I am just never prepared to make things AHEAD of the season. If I were really organized, I’d make things and SAVE them for next year. Like that will ever happen.

    I love that you posted this post-Superbowl! I mean in the end, that is the natural order of things because you would make this for the big day and then write about it. I’ve just been making Superbowl foods weeks in advance and then on the big day, I think we had Korean food.

    Anyway, this queso is a must. Jason would devour this instantly!

    As someone who doesn’t bake cookies for the holidays, post appetizers for football games (that we don’t watch) or share adorable Valentine’s Day desserts, I want to say THANK YOU!     Kristin This IS WHY I LOVE YOU Gerl!! I am so not trendy either. It takes way too much effort, and complaints by my family that I’m cooking things out of order….why are we eating thanksgiving food on the 4th of July Wah wa wa hahah! I say us non trendy food bloggers gotta stick together! xoxoxo ; ) but then again…I am awful thankful for those FB that are trendy where the heck would we be when “the” day came with out them!

    It must be delicious. As a Valentine’s gift for my girlfriend I’ve just made a private booking for one of the courses organized by Zac’s cooking school here in Vancouver – cooking classes for couples and I think this recipe could be among the first ones we’ll try together. So it fits in perfectly with my romantic plans. 🙂
