Can we talk for a minute about this stage of life I’m in? I thought when my kids were young life was hectic, but having teenagers with crazy different schedules than the rest of the family is throwing me for a loop. Long gone are the consistent nights of “family mealtime“. Instead, we get to experience the rare occurrence of us all sitting down for dinner at the same time just a few times a week.

When my oldest is not at sports practices or games, he has a job umping baseball which keeps him gone many nights from 5 until 9:45. This means he needs to eat dinner incredibly early and since he’s a always starving teenager he eats his 2nd dinner when he gets home.

My three girls are all involved in sports activities as well as school clubs like yearbook and publications. This means some nights they are out for games or to take pictures at games, etc. Throw in Nick’s crazy travel schedule and what we have is the need for dinners that are quick, easy and able to be eaten at various times of the evening. I’m so glad I discovered al fresco all natural chicken products because it has saved this new dinnertime struggle. Healthy, delicious and QUICK are the key things I look for in a meal now, and al fresco absolutely fits all of these. …

Have you all heard of “crack slaw” or what I’m calling Beefy Asian Slaw? My friend Aggie was telling me about how it’s a great low carb meal, but I hadn’t heard of it before. When I told her I wasn’t a big fan of coleslaw, she mentioned it wasn’t really a slaw recipe, but more of a great Asian inspired type meal. Immediately curious, I looked up a crack slaw recipe and decided to give it a try. I am so glad I gave this recipe a chance because it was so good! Like, make it at least once a week, good! …

Ever since Weight Watchers changed their program to the new Freestyle program, eggs have been eaten like crazy in my house. Since eggs are now Zero SmartPoints on the new Freestyle program, I have been incorporating them more and more into my every day meals. One of my favorite creations since this new program launched is this Healthy Egg Casserole recipe. Packed full of veggies and flavor, I just can’t get enough of it….

This twice baked breakfast potatoes recipe is all that and a bag of chips. I can’t wait to share! Before I share it with you, let me give you some backstory.

Weight Watchers changing to the the new Freestyle program has me thinking a lot about my friend Andie Mitchell’s cookbook Eating in the Middle. The new Weight Watchers Freestyle program seems to be a lot about practical balance. Those of you who follow Andie know this is exactly what she has been preaching for years. It’s not about elimination and deprivation, it’s about “wholesome eating, most of the time”. I really like that concept and think this cookbook is going to guide me well throughout my journey.

I’ve been cooking from this book since receiving it a year ago. I can’t believe I haven’t shared it on Dine & Dish with you. Now’s the time!

Weigh in on Saturday was not pretty, but it’s done, and I’m back in a healthy mindset today.

You may be wondering why I would share a recipe that includes creamy, cheesy, delicious risotto if I’m back on the health focused train? Because, friends, this is butternut squash risotto, one of Alexia’s newest premium vegetable side dishes! This Butternut Squash Risotto is a much healthier alternative to the typical starches you find on our dinner table. Plus, it’s Gluten Free and only 3 points per delicious serving. You won’t miss the starch when you add these new vegetable side dishes from Alexia to your dinner table….

Oh, what a week. We had our heating and cooling company come on Monday to do our annual winter furnace tune up. That all went fine and well until Monday night, when we realized our furnace had stopped working. Assuming it was an easy fix, we called the heating and cooling company and they came back out on Tuesday. Still not working. They replaced our furnace on Wednesday because our furnace was 13 years old. So, $3300 later and a new furnace and guess what…still not working. It’s now Friday and they have been out every day this week for hours and hours trying to figure out what’s going on. Meanwhile, the temps have been in the 20’s, and you know how I feel about cold… I am NOT a fan. …

I wonder if I searched Dine & Dish, how many times over the past 11 years I have mentioned joining weight watchers? I’m guessing at least 5. Here I am again, admitting that I’ve joined Weight Watchers. Over the past couple of years I’ve lost 35 pounds, then gained 45. Now I am desperate to stop this darn cycle of struggling with my weight.

I lost the 35 pounds by being on an incredibly restrictive, low calorie, low carb, high protein diet. After losing the weight (and my hair – wierd) and reaching my goal, I realized that although the weight loss wasn’t all that hard to do, sticking with that restrictive of a diet for the rest of my life was not feasible. I missed wine. And bread. So in typical Kristen all or nothing fashion (remember me talking about that before?), I went full on the opposite plan, and gained all the weight I lost and more. Ugh….
