Favorite Recipes the Costco Way

My husband always passes up freebies. You know, when you are in the store and they have a free sample of this or a free sample of that, he walks right on by. I, on the other hand, am a freebie fool. Even if I don’t like the sample, I usually find myself taking one…just because it is free.

One freebie I never pass up is the annual Costco cookbook. Costco picks one weekend a year to give away a cookbook of Costco recipes. This year it is a cookbook titled “Favorite Recipes the Costco Way “. This is probably one of the best cookbooks I have come across in a long time, simply based on ease, presentation, and variety of recipes. The photographs are gorgeous as well, which always draws me in.

If you missed the chance to get one of these fantastic, 248 page, glossy cookbooks, don’t fret. You can check out the listings for Favorite Recipes the Costco Way on Ebay. I have no idea why anyone would want to give up such a great cookbook, but to each is own.

Expect to see a lot more from me over the next few months from this lovely cookbook. In the meantime, I’ll share this recipe with you form the cookbook for free 🙂

Sausage-Stuffed Mushrooms

Course Appetizer

Cook Time 30 minutes minutes
Total Time 45 minutes minutes
Servings 6 people

Ingredients

  • 12 ounces
  • ground sausage
  • 18 large white
  • mushrooms
  • 2 8- ounce packages cream
  • cheese softened
  • 3/4 cup dry bread
  • crumbs
  • 3/4 cup red wine
  • divided
  • 1/4 cup real bacon
  • bits

Instructions

  • Preheat oven to 325 degrees F.
  • Cook sausage in a large deep skillet over medium-high heat, stirring and breaking up with a fork, until evenly browned.
  •  Drain and set aside.
  • Clean mushrooms with a damp cloth.
  • Remove, chop and reserve stems.
  • In a medium bowl, gently mix the chopped mushroom stems, cream cheese and bread crumbs. Stir in the sausage, bacon bits, and 1/4 cup wine.
  • Spoon the sausage mixture
  • into the mushroom caps. Transfer to a large baking dish and drizzle with remaining red wine.
  • Bake for 25-30 minutes, or until lightly browned.
  • Makes 6 servings

    I didn’t get a copy of the book. Therefore I’ll look forward to many more recipes to come from Costco. I never seem to be there at the right time to get any samples. They are always just starting to cook or not there at all…some day…My brother says he can go there for lunch.

    Boohoo why have I never even seen this darn cookbook! I’ve heard others mention it and I forgot to look again this year.

    I like the freebies too! Not because they are free but because I like snacking 🙂

    I have been a Costco member FOREVER and have never noticed the Costco cookbook! I’m going to have to try and get my hands on one.

    Kristen – I LOVE the Costco cookbook as well! I discovered it last year and made sure to get one this year. These mushrooms look wonderful.

    I actually was at Costco the day they gave this out – and I didn’t even know about it before hand, so I totally lucked out! I haven’t made anything out of it yet, but plan to very soon!

    Like you, I would never pass up those freebies. But alas, I seemed to have missed out on the cookbook too, so I’ll look forward to what you cook out of it!

    I actually love the free samples at Costco! The problem is if you want to cook from the cook book you need a hair net and a white apron to do it effectively. Also if you grunt a bit and say that the samples are not ready then you are almost there!

    Mmmm….I love stuffed mushrooms, but the recipe I chose this past holiday season wasn’t as good as this one sounds. I love the idea of the red wine in it.

    stuffed mushrooms! yum. i bet you could do a vegetarian version of this recipe pretty easily, too. i am a freebie junkie too, btw — unless it’s something i actively DON’T want, i always take them. 🙂

    hahahaha I was just lookng at my Costco free cookbook and I thought that they did a great job and then I day dreamed for a while about working on putting the next one together and then back to the real world.

    I can’t thank you enough for pointing out the Costco Cookbook. I didn’t know it existed until today. I spent a "few" minutes reading it online – trying to figure out just how or when I’ll get my own copy. I just love good cookbooks.
