We just returned from our annual spring break family vacation and even though we tried to be really conscientious about spending money, we still spent more money than we budgeted. It’s that time of year again. You know, where I buy a carton of eggnog because I really think I love it. Then I have my first official glass of the season, feel immediately ill from how rich it is, and end up with an entire carton of eggnog in my fridge I don’t know what to do with.

I love the flavor of eggnog, and maybe a small sip should be my limit, but I’ll continue to buy eggnog year after year. I love having the leftovers to use in eggnog desserts and baked goods. This season, my leftover eggnog got the muffin treatment with these simple oatmeal eggnog muffins. Oh so good!…

Crunchy Grape Nuts Muffins Recipe

Grape Nuts Muffins are a tasty muffin with a delicious crunch!

I opened my pantry this past week to find five 3/4 eaten boxes of cereal and a kitchen full of kids saying we had nothing to eat.

I usually make a big breakfast for my kids before school, but this particular morning I was running behind and told my kids to just grab some cereal. Every single one of them came back to me saying “but there isn’t any cereal…we have nothing to eat!”. So, apparently FIVE boxes of cereal with cereal STILL IN THEM doesn’t count as food? Am I the only house this happens in? Seriously, what is wrong with the last 1/4 box of cereal? Can someone explain that to me? It never fails with cereal and bread, no one wants to eat the last bit left. I don’t get it.

Hearty Muffin Recipe with Walnuts, Oats and Applesauce

This “heart”y heart healthy muffin recipe is full of great ingredients, like Fisher Walnuts, Oatmeal and Applesauce!

It’s funny how our tastes change as we get older, isn’t it? I used to hate having things in my muffins. In fact, I used to pretty much make muffins that resembled as close to a breakfast cupcake as possible. Plain Jane muffins, delicious, but not really substantial.

As I’ve aged, I’ve realized I want more out of my breakfast. Instead of something that’s filling, I want a hearty breakfast with substance to sustain me until lunch time. Those breakfast cupcake muffins I used to make weren’t going to cut it. I needed a muffin recipe full of good for me ingredients that also doubled as a filling and substantial start to my day….

Oh Two-Handed Coffee Hour… how I love you so.

Did I ever tell you what inspired my two-handed coffee hour? Well it was a few things. First of all, the name was inspired by this blog post on Under the Sycamore. Adding friends and making it a weekly (or kind of weekly) event was inspired by Desperate Housewives, of all places. I swear I was born to be a 1950’s type housewife…although in reality I’d probably be quite miserable. I mean, what did those ladies do all day without the internet to keep them company? 😉

Anyway, you know how in the show Desperate Housewives, after the men would head off to work (or to their mistresses house or to murder some unsuspecting neighbor) the wives would get together in one of the kitchens and spend an hour or so drinking coffee together, chatting about current life drama? I love that… I wanted that. And in all of my 12 years of being a work from home mom, that’s not something that ever really happened regularly. So, I decided to create my weekly Two-Handed Coffee Hour for a once a week connecting time with friends. And I love doing it as much as I thought I would. It’s a soul charging, happy hour. Connecting, especially when you are fairly isolated at home during the day, is such an important thing. …
