Our favorite California Cobb Salad recipe in a handheld sandwich form!

I love a good salad, don’t you? I especially love those salads that make you feel like you are being healthy, when really you aren’t. Cobb salads are one such salad. I mean really, is there any better salad than a Cobb salad? Chicken, bacon, tomatoes, eggs, lettuce, cheese, California Avocados and blue cheese dressing…what more could a salad want?

I’ve had Cobb salads in wrap form and even in pizza form (I know it sounds strange, but it was so good!). One way I’ve never had a Cobb salad though was in the form of a sandwich. What better way to have your favorite salad than in a form you can grab and eat on the go? I decided that a Cobb Salad sandwich needed to happen in my life, stat.

I love food trucks…as an eater and a cook. I obviously love to eat food, hence why I love to eat from food trucks. But as someone who develops recipes and does food photography for a living, I absolutely love the spark of creativity I get from eating at a food truck.

Food trucks, at least around here, have a lot of pressure to be really good and unique. We have some amazing restaurants in Kansas City, and not so many food trucks. There isn’t any hiding among a ton of trucks hoping to squeak by… you either serve amazing food, or your gone.

Can we talk about bologna? We can? Good. I have to get something off my chest. So…I love bologna.

Bologna seems to fall into 3 categories. 1 – people who love it. 2 – people who hate it. 3 – people who just want to ask you “do you know what part of the pig bologna comes from?”. For the record, I don’t want to know, but thank you.

I don’t love bologna in an eat it every day kind of way. I love bologna in a nostalgic, sandwich from my childhood on Wonder bread and American cheese kind of way. I remember specific events that happened in my life and when I think back I was often holding a smooshed bologna and cheese sandwich on white bread in my hands. We even had a fried bologna and cheese type sandwich on our school lunch menu. Can you imagine Michelle Obama allowing that now?…

Back to School {Recipe: Chopped Ham and Cheese Rolls}

Chopped and fried honey ham lunch meat topped with shredded cheese and placed in a King’s Hawaiian sweet hotdog bun is a quick and simple back to school time dish… on the table in a matter of minutes!

Friends… I hear you. We are struggling! This back to school business is hard. After a summer of relaxed bedtimes, come and go as you please schedules, and meals at all the odd hours of the day, this whole getting back into the swing of a rigid school schedule is tough.

I never thought that having 4 kids in 3 different schools, on 3 different starting and ending schedules would be difficult. Not to mention going 4 different directions after school for the various activities… tutoring, football, volleyball, dance, school of religion, etc. I’d love to be one of those bloggers posting 25 great back to school breakfast recipe roundups or 50 quick and easy after school meals, but to be honest with you, after 1 week down I can tell this school year we are going to be lucky to hug and say goodnight at the end of the day, let alone sit down to elaborate meals at the same time every night. My mojo for the 2014-2015 school year is simply going to be to survive.

I’m not complaining… just keeping it real. I love my life, my kids and our crazy schedules and wouldn’t have it any other way! I just know we, like so many of you, are going to be facing challenges this year to stay connected and sane….

A Father’s Day recipe for meatball subs with a Hawaiian touch and made with King’s Hawaiian Mini Sub Rolls.

Father’s Day is this weekend… yay dads! Don’t you think dads are the hardest to buy for? I struggle every year for both my husband and my dad when it comes to father’s day gifts. One year I got my husband a lawn mower and he was ecstatic, but it felt so wrong. I mean, it’s pretty much the equivalent of him buying me a vacuum for mother’s day. No one wants things that reminds them of all the chores they have left to do around the house for Mother’s Day, do they? Well, I guess if it was a really nice high end vacuum I’d maybe have a different opinion, but still…I’m pretty sure that things that remind us of our to-do list which is ten miles long are not acceptable gifts.
