Sandwich night is a common thing in our house. Sandwiches are quick, filling and portable – which for a busy family on the go is key!

One way to amp up sandwich night is by breaking out your panini press. I seem to go in spurts with using our panini press…I sometimes forget all about it, but then when I use it I’m quickly reminded what an awesome little appliance it is. There’s something about a toasted panini sandwich to really make sandwich night great!

Southwest California Avocado Chicken Panini recipe

This Southwest Avocado Chicken Panini is one of my favorite sandwiches to make for a couple of reasons. First of all, the flavors blend together so nicely to make an amazing chicken panini. Secondly, it’s quick and easy – the chicken can be made ahead of time and then assembled as a sandwich and pressed whenever you are ready to eat. I love meals that can be done ahead of time – especially on busy nights. Instead of just slapping a couple pieces of cold cuts onto some bread, this sandwich can be made with just a little bit more effort but incredible results.

Southwest Avocado Chicken Panini Recipe

Amp up sandwich night with these Southwest Avocado Chicken Panini Sandwiches.

Ingredients

  • 1 Tablespoon coconut oil or Olive Oil
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 pound boneless chicken tenderloins
  • 2 ripeCalifornia Avocados pit and peeling removed
  • 1 Roma tomato chopped
  • 1/4 teaspoon salt
  • 1 Tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 red bell pepper seeded and cut into strips
  • 4 slices provolone cheese
  • 8 slices sourdough bread

Instructions

  • For the chicken:
  • In a small bowl combine garlic powder, chili powder, salt and paprika. Rub over both sides of the chicken.
  • Place coconut oil in a large skilled and heat to medium. Carefully add chicken, cooking for 6 minutes on each side, or until chicken is cooked through and juices run clear.
  • For the panini sandwiches:
  • Place California Avocados, chopped tomatoes, salt, olive oil and lemon juice in a small bowl. Mash together until smooth.
  • Assemble each sandwich by spreading an even amount of avocado mixture on 4 slices of bread. Next, layer red peppers, cooked chicken, cheese then top with the other slice of bread.
  • Warm up your panini press and spray with cooking spray. Add each sandwich individually and press. Cook for approximately 5 minutes each, or until cheese is melted and bread is toasted.

    Oh, Kristen – you’re so right about easy portability (like these yummy sandwiches!) being a key to success for busy families! My gosh, I hear ya! And I also totally get it about those spurts of using certain genius appliances and then forgetting all about them for awhile, until you rediscover their genius all over again (hello, panini press, my friend!). So, these easy, healthy sandwiches have just loads going for them – easy portability, tons of nutrition, and layer upon layer of flavor! Brilliant! I am so totally pinning these to share (and really wishing I was munching on one right now, instead of last night’s leftover pasta LOL)! 😀

    I love quick and hearty recipes because I do not have time to make aldo that it takes a lot of time to do, and I always like to offer a different dish for my children, I found this wonderful southwestern avocado chicken panini recipe, I noticed something different for me , Mix avocado with chicken but I believe it will add a special touch, it will be a success here!

    I am definitely loving the way this recipe goes, Kristen. Thanks for sharing this! I must say, I liked how you included the provolone cheese in your recipe; I like the spicy flavor it gives. Just my two cents but it might also be a good idea to go with Fontina, Mozzarella, Scamorza in case provolone is unavailable. And from just looking at the ingredients list and the picture itself, I’m sure this will be flavorful and healthy as it is delicious. Kudos!

Can’t believe we’re doing the college tour thing already with my second baby! 

So question for any of you who sent your kids to out of state schools or went to out of state schools...how did you do it? She wants to get the heck out of Kansas (I’d like to go with her!). We have money saved, she’ll most likely get a scholarship or two, she’s paying and has money saved as well...but even with that out of state tuition is a beast of an amount. So, did you just assume that student loans were going to be part of that life? And is that worth it to give your kids a shot at a new life outside of your home state? I wish I would have left Kansas for university, and have been here since I was born 😩. I want different for her if that’s what she wants but also just don’t have any experience with how people do out of state college! Any tips?

My friend @wakschmale makes the best strawberry jam...and I completely forgot about a jar she gave me last year until this morning. Which then inspired me to make my favorite buttermilk biscuits. So so good. Are you a jam, honey, just butter or plain biscuit fan? I love biscuits allll the ways, except with gravy. I have super bad memories of biscuits and gravy growing up. 🤢

The “long haul” effects of having Covid back in December are really presenting themselves lately. The continuous persistent headaches are taking a toll and the connection between the brain fog and word retrieval function of my brain has been extra challenging. I had no idea a couple months out, the cognitive effects would still be hanging around.

With that said, when I get a burst of inspiration I’m grabbing on for dear life. I made our favorite chocolate chip cookies recipe yesterday and felt the desire to update the blog post photos from 2007! We make these cookies all the time, so I’m not sure why it’s taken me so many years to give that poor post some new photos.

It was so strange being on a plane again. I’m so thankful I have the antibodies because the flights were full, which seemed wrong, but everyone around me did seem to keep their masks on, so that was good.

G is for...oh so grateful!

I flew to South Texas yesterday to visit my parents whom I haven’t seen in 2 years. They live around 17 hours away from us. We typical get to see each other a few times a year but with the pandemic and other health issues it just wasn’t able to happen and I’ve missed them soooo much.

Grateful to have had COVID last month. Although it was not at all fun, it gave me the antibodies to make this trip possible. My dad is having surgery tomorrow so I’m helping with my mom so my dad can recover without having to worry about her.

Kansas is enjoying frigid temperatures and snow. I picked a great week to head south.

F is for...food photography.

This time of year especially, food photography (and I guess all photography actually) is a tug of war with time and light. I had planned on making and photographing a delicious pasta recipe, but my grocery delivery ran a couple of hours late because of snowstorm. So, at the eleventh hour I decided to make a cake...that took over an hour to bake and I had about 90 minutes of natural light left...leaving me with about 30 minutes of ok light to work with.
.
Anyway, this wouldn't work for a client shoot because the cake, although delicious, didn't turn out looking so great. But it will work great for today's F photo for the @kimklassen_innercircle A-Z photo project:) Lemon Citrus Yogurt Cake from this weeks @cabotcheese newsletter. So good!

There’s a lot of excitement in Kansas City as our beloved @chiefs head back to the Super Bowl this weekend! #runitback 🏈

It’s so strange because winning the super bowl last year was the last “normal” thing that happened before the pandemic hit. We went from a city full of excitement to shutting down and sheltering in place. Maybe when we win and bring the trophy home this year, it’ll be the start of something great. Let’s hope!
