Have you all heard of “crack slaw” or what I’m calling Beefy Asian Slaw? My friend Aggie was telling me about how it’s a great low carb meal, but I hadn’t heard of it before. When I told her I wasn’t a big fan of coleslaw, she mentioned it wasn’t really a slaw recipe, but more of a great Asian inspired type meal. Immediately curious, I looked up a crack slaw recipe and decided to give it a try. I am so glad I gave this recipe a chance because it was so good! Like, make it at least once a week, good! …

Ever since Weight Watchers changed their program to the new Freestyle program, eggs have been eaten like crazy in my house. Since eggs are now Zero SmartPoints on the new Freestyle program, I have been incorporating them more and more into my every day meals. One of my favorite creations since this new program launched is this Healthy Egg Casserole recipe. Packed full of veggies and flavor, I just can’t get enough of it….

This twice baked breakfast potatoes recipe is all that and a bag of chips. I can’t wait to share! Before I share it with you, let me give you some backstory.

Weight Watchers changing to the the new Freestyle program has me thinking a lot about my friend Andie Mitchell’s cookbook Eating in the Middle. The new Weight Watchers Freestyle program seems to be a lot about practical balance. Those of you who follow Andie know this is exactly what she has been preaching for years. It’s not about elimination and deprivation, it’s about “wholesome eating, most of the time”. I really like that concept and think this cookbook is going to guide me well throughout my journey.

I’ve been cooking from this book since receiving it a year ago. I can’t believe I haven’t shared it on Dine & Dish with you. Now’s the time!

Oh, what a week. We had our heating and cooling company come on Monday to do our annual winter furnace tune up. That all went fine and well until Monday night, when we realized our furnace had stopped working. Assuming it was an easy fix, we called the heating and cooling company and they came back out on Tuesday. Still not working. They replaced our furnace on Wednesday because our furnace was 13 years old. So, $3300 later and a new furnace and guess what…still not working. It’s now Friday and they have been out every day this week for hours and hours trying to figure out what’s going on. Meanwhile, the temps have been in the 20’s, and you know how I feel about cold… I am NOT a fan. …

A simple and satisfying Weight Watchers recipe.

I wonder if I searched Dine & Dish, how many times over the past 11 years I have mentioned joining weight watchers? I’m guessing at least 5. Here I am again, admitting that I’ve joined Weight Watchers. Over the past couple of years I’ve lost 35 pounds, then gained 45. Now I am desperate to stop this darn cycle of struggling with my weight.

I lost the 35 pounds by being on an incredibly restrictive, low calorie, low carb, high protein diet. After losing the weight (and my hair – wierd) and reaching my goal, I realized that although the weight loss wasn’t all that hard to do, sticking with that restrictive of a diet for the rest of my life was not feasible. I missed wine. And bread. So in typical Kristen all or nothing fashion (remember me talking about that before?), I went full on the opposite plan, and gained all the weight I lost and more.
We are almost three weeks into our summer and we have probably had our best one yet. I was worried about not doing our Summer Bucket Lists this year because I know how much fun we have had the past three years checking things off, one by one. There is, however, a certain kind of freedom to not having a “list” hanging over my head to get done. Instead, our summer so far has been full of fun and spontaneity. It’s been full of me saying “yes” a whole heck of a lot and us deciding that day what we’re going to do. It’s been amazing and I’m loving it! (Hopefully you are following Dine & Dish on Instagram and seeing all of our fun shenanigans.)

I’m taking the same attitude with Dine & Dish this summer… not that I’ve ever had a real strict schedule or expectations for myself, but things around here are going to be more relaxed than normal. For the most part I’ve decided to take the work part of summer off. I, of course, have my favorite long term clients I’ll continue working with, but I’ve said no to taking on anything new and will just be posting what moves me, when it moves me. I am so excited to have this summer be one where I get back to my roots here on Dine & Dish and fall in love with doing this blog thing just for the pure joy of it… not because I have work obligations to fulfill. …

I go to Weight Watchers meetings on Saturday mornings. I’ve been going since November, at first consistently, then, you know… I left town for a bit and had way too many Pina Coladas…and was nervous to step on that scale when I returned. Turns out, I only gained 1 pound, and am now down 10 pounds total since I first joined (without whole heartedly trying). It’s funny how we take a look at things and only pick out the negative. “Oh, I’ve eaten too much over the past month so surely the scale is going to show me the worst”. Instead of… “I went to the gym 4 times a week this month and exercised almost every day on my vacation, so the scale is going to be really nice to me!” Turns out, it’s silly to expect the worst, isn’t it?

I haven’t been a very good Weight Watcher since the new year. I haven’t done a very good job of counting points and staying on plan, but what has clicked with me is that I’m more aware of what I put into my mouth. In fact, yesterday, I mindlessly put a bite of a dessert I was making for a client in my mouth, and ended up spitting it out because I didn’t want it. It’s such a habit for me to just eat whatever is in front of me! I’m trying to change that….
