I know you are probably sick of hearing about it, but I am so in love with this cookbook! The Carrot Cake with Cream Cheese Frosting recipe from Table Talk by Carol McManus is so easy and incredibly moist and delicious. I’m in love!

    My son still doesn’t believe that there are actually carrots in carrot cake, he loves it.. but he is always amazed. This looks Really good!! my cream cheese icing never comes out right though, what’s your secret?

    Wow! That looks… delicious. Scrumptious. More-than-any-other-umptious, yum.

    I use cooking lights carrot cake, and it’s good. But am always willing to branch out to try a new recipe! Will definitely give this one a go!
