In 1 1/2 weeks, I’ve made 3 dinner recipes from The Skinnytaste Cookbook and have been thrilled with each and every one. I’ve tried the Mongolian Broccoli and Beef (served it to company and everyone raved), The Best Buttermilk Oven Fried Chicken (served it to my kids and not a bite was left), and this Chicken Caprese Pasta Recipe (I didn’t want to share, but did, and everyone loved it). My copy of Gina’s cookbook is being very well loved. I’ve post-it noted up the entire book with recipes I can’t wait to try.

Chicken Caprese Pasta Recipe

A simple, fresh, and delicious Chicken Caprese Pasta recipe from the Skinnytaste Cookbook
Prep Time 15 minutes
Cook Time 20 minutes

Ingredients

  • 1 pound skinless boneless chicken breasts cut into 1/2 inch cubes (I used boneless chicken tenderloins)
  • 1/2 teaspoon dried basil
  • Kosher salt
  • Freshly ground black pepper
  • Cooking spray
  • 9 ounces pasta
  • 4 teaspoons extra-virgin olive oil
  • 6 garlic cloves coarsely chopped
  • 2 1/2 cups halved grape tomatoes
  • 1/4 cup thinly sliced fresh basil I forgot this!
  • 4 ounces part-skim mozzarella cheese cut into cubes

Instructions

  1. Heat a large nonstick skillet over high heat. Season the chicken with the dried basil, 1/4 teaspoon of salt, and black pepper to taste. Spray the skillet with oil and add the chicken. Cook until the chicken is cooked through, about 3 minutes on each side. Transfer the chicken to a plate.
  2. Cook the pasta to al dente in a pot of salted boiling water according to package directions. Drain, reserving about 1/2 cup of the pasta water.
  3. Meanwhile, increase the heat under the skillet to high, add the olive oil and garlic and cook, stirring until golden, being careful not to burn it, about 1 minute. Add the tomatoes, 1/8 teaspoon salt, and black pepper to taste, and reduce the heat to medium-low. Cook, stirring until the tomatoes become tender, 5-6 minutes.
  4. Add the pasta to the tomatoes. If the pasta seems too dry, add some of the reserved pasta water. Add the chicken and toss well. Remove the pan from the heat, stir int he fresh basil and cheese, and serve hot.

    Oh man. I spotted Gina’s cookbook in Target yesterday and had to stop to peek. It looks amazing! I’ve followed skinnytaste for a while, and everything she makes is delicious! I’d love to have one of her cookbooks to help my family continue to eat real food (not the processed junk that’s seems so easy to make, but leaves us feeling unsatisfied).     I have started following you on Pinterest and would both, love and appreciate this amazing cookbook. I have struggled with my weight all my life and have now developed IBS and an extreme case of gastritis. I found Skinnytaste while liv ing in Japan and a lot Gina’sr recipes kept me healthy, satisfied and sane lol! My daughter is also dealing with her weight at the tender age of 21 and would benefit from Gina’s book in a great way (seeing that she lives alone, loves to cook and searches online regularly for healthy, delicious recipes).     I’ve recently was introduced to Skinnytaste.com and I LOVE her dishes. The ingredients are things that I typically use (none you would only use for one recipe and nothing unusual). So far this week we have had nothing but her meals for dinner and they each were a hit with the family. I’ve been telling all my friends about her website and sharing my favorites. I would love to have the cook book in my home to continue to enjoy all her delicious recipes.

    Such good recipes on her blog and so helpful on Weight Watchers. Everyone in my family loves the food. I would love this cookbook as I havent found it yet in Canada and am anxiously awaiting it. I ordered it today from Amazon but know I will be ordering more for Christmas gifts.

    Why do I need to add this cookbook to my kitchen? I just finished remodeling my kitchen (DIY) and plan on cooking in it every night. To do that I need to stock it full of cookbooks and healthy cookbooks would help even more!

    I don’t want it. I NEED it! I starting walking and watching what i eat for the last 81 days. I am down 27 pounds.     I follow you on Facebook. Yesterday my 22yr son texted me and asked me to teach him healthier meals for himself. Then my 15yr son said, Ok Mom, I’m ready to try eating healthier. Can I try what you have in the morning tomorrow ( fruit, yogurt and muesli) this cookbook would help my sons take ownership of making healthier choices and TEACH them recipes they can cook for ME!     I have tried several recipes from skinnytaste and they’ve all turned out amazingly well. My current favorite is Gina’s recipe for Cilantro-Lime shrimp. It seems fitting that this book should be the first in my (currently non-existent) collection.

    I have used so many of the recipes from the website “Skinnytaste”. Every time I do I am always happy with the results. They are full of flavor and easy to make. My husband always asks when he is eating one of the recipes “are you sure this is healthy?” Many times when you cook “skinny” the one thing it lacks is flavor, not with her recipes!!! Many have a little spicy kick to them which helps to make the meal more flavorful. Whenever I am wondering what to make for dinner I always go to the site for suggestions. I would love to have the opportunity of having her cookbook as a quick way to find something for dinner. It would be a great addition to my kitchen. Maureen

It was so strange being on a plane again. I’m so thankful I have the antibodies because the flights were full, which seemed wrong, but everyone around me did seem to keep their masks on, so that was good.

G is for...oh so grateful!

I flew to South Texas yesterday to visit my parents whom I haven’t seen in 2 years. They live around 17 hours away from us. We typical get to see each other a few times a year but with the pandemic and other health issues it just wasn’t able to happen and I’ve missed them soooo much.

Grateful to have had COVID last month. Although it was not at all fun, it gave me the antibodies to make this trip possible. My dad is having surgery tomorrow so I’m helping with my mom so my dad can recover without having to worry about her.

Kansas is enjoying frigid temperatures and snow. I picked a great week to head south.

F is for...food photography.
.
This time of year especially, food photography (and I guess all photography actually) is a tug of war with time and light. I had planned on making and photographing a delicious pasta recipe, but my grocery delivery ran a couple of hours late because of snowstorm. So, at the eleventh hour I decided to make a cake...that took over an hour to bake and I had about 90 minutes of natural light left...leaving me with about 30 minutes of ok light to work with.

Anyway, this wouldn't work for a client shoot because the cake, although delicious, didn't turn out looking so great. But it will work great for today's F photo for the @kimklassen_innercircle A-Z photo project:) Lemon Citrus Yogurt Cake from this weeks @cabotcheese newsletter. So good!

There’s a lot of excitement in Kansas City as our beloved @chiefs head back to the Super Bowl this weekend! #runitback 🏈

It’s so strange because winning the super bowl last year was the last “normal” thing that happened before the pandemic hit. We went from a city full of excitement to shutting down and sheltering in place. Maybe when we win and bring the trophy home this year, it’ll be the start of something great. Let’s hope!

D is for... Dreary (and Dog)
February has always been my least favorite month. I have a special name for this month that may start with another not so nice F word...🤭.

In Kansas, the sun usually doesn't shine that often, it's cold, and just kind of gray and blah.
.
My indoor jungle makes me happy though...especially this space in my office. Houseplants almost makes me forget we’re in the “F” month 😂.
.
Also, my dog (my favorite d word) would not sit still for a picture when I had my tripod set up, but I finally caught her sitting on her bed and had to catch a picture with my phone. Swipe and you’ll see she is much overdue for a haircut.

C is for Coaching, Coffee and Crystals! Lots of C words today. My @rockyourhappy coaching practice has been the best thing. I am so lucky to be working with really great clients who are doing the hard work and making big changes in their lives. It’s been the perfect fit for me and I know it’s what I am meant to be doing. Coffee, of course, is my favorite C word and Crystals…my daughters got me into the energy powers of crystals and it’s been really fun to learn all about them.

B is for Books! Are you a big reader? I wasn’t really a reader growing up. Well, I take that back. In junior high I plowed through the Sweet Valley High series (anyone else?) 😊 And when I was in elementary school I would bust my butt to get to the highest level in the SRA Reading box before anyone else. But I wasn’t a kid who you’d find with their nose in a book, ever.

It wasn’t until I was an adult, and my kids began to sleep through the night, that I started reading for fun. Now, I read all the time and it’s one of my favorite pastimes. I love talking books with people and sharing recommendations. I really don’t watch TV, so books, especially right now, is my main form of entertainment.
.

This is why for the @kimklassen_innercircle A-Z photography challenge, I knew that Books would be my B. It’s my favorite B word (beating out Bullet Journaling, Bread, Blankets, Be Happy, etc).

A is for Alone. I think one of the hardest things for me to get used to this past year is rarely being alone. My husband used to travel all the time. My school aged kids were in school all day while I worked. I’d even get several days a month in a hotel room by myself for my work travels. I like my alone time and it’s definitely something I miss.
.

I’m easily distracted so you will usually find me working in complete silence…maybe just the hum of my essential oil diffuser and the sound of my fingers on my keyboard. I need the quiet and treasure silence.
.

With that said, I’ve loved the extra time with my family - and we’ve all learned over the past several months how to give each other space and recognize when we need that space. As of today, my kids all are back to school full time in person 😢. Nick is still working from home and will be for the time being, but now the aloneness feels strange. I’m sure we’ll get used to this “new normal” yet again!
