Cooking Light & Perfect Portions Giveaway (Recipe: Pumpkin Pudding)

The pumpkin biscuits with the orange-honey butter I made yesterday were certainly a big hit around my house. We gobbled them up in no time, and my kids were wondering “Pumpkin muffins one day, pumpkin biscuits after that…what’s next, mom?” Well, I couldn’t disappoint them. In fact, I had a half a can of pumpkin leftover because the biscuits only use 1/2 a can. What pumpkin treat could I make that would work with only a half a can of pumpkin?

Later in the day when I was thumbing through the November 2010 issue of Cooking Light magazine I happened across a recipe for Pumpkin Pie Pudding requiring only a 1/2 cup of pumpkin. I instantly knew what I would be making with my leftover pumpkin. Let me tell you, these little beauties did not disappoint. (Just found out that this recipe is from our very own food blogging friend, Susan from Food Blogga! I love seeing my blogging friends in print. Great recipe, Susan!)

Another thing that never disappoints me is Cooking Light magazine. As someone who writes for magazines, I know how hard it is to put a magazine full of great recipes together and they seem to hit the mark with each issue. Every time I open an issue of Cooking Light, I seem to run out of post-it note sticky flags because I have page after page after page marked with recipes that I want to add to my I Will Make This Someday List.

    We’ve just started on a diet and I’m still struggling to understand portions still. Each diet says different things about different foods – what I do know is that it’s difficult to find tasty stuff to cook with certain things. This pumpkin dessert looks ideal though!

    I could definitely use that kitchen scale. James is doing weight watchers, and I have a protein centric diet, so it could very much come in handy. And I love any cooking magazine. If you endorse it, I want it! (Oh, and I’ll be making that pumpkin pie pudding STAT.)

    Pumpkin Pudding! Sign me up! That sounds amazing. Cooking Light has always been a favorite of mine. Even if I don’t follow their lighter suggestions (i.e. low fat low sodium broth, skim milk, etc.), their recipes are always a win for us.

    I love Cooking Light – they have some fabulous recipes that prove food doesn’t have to be drowned in butter to be delicious. They also give me ideas for ways to spice up our typical dishes. Love them!

    Bought three cans of pumpkin yesterday so I can jump into fall with baking this weekend. I can’t wait. Cooking Light is a favorite and it just so happens my subscription has lapsed.     I LOVE all pumpkin treats!! Another fun pumpkin recipe for a healthy snack/dessert is to mix pure pumpkin with Greek Yogurt, some agave nectar and some cinnamon… It has been my little fall dessert for the past few weeks!

    OMG! First, I love making Cooking Light recipes and they always turn out great!! Second, I am a huge Alton Brown fan and he always stresses the use of a scale when baking/cooking and I haven’t been about to get my hands on one. Your giveaways are just what I need!!     I love autumn because it has some of the best colours, best temperatures and most of all, best produce of the year! I especially love pumpkin because it allows me to use more pumpkin in my baking. Speaking of baking, I have recently discovered the ultimate tool in baking precision: a scale.
    It is truly the best way to get consistent cookies, muffins, pie crusts etc.

    I am also in love with Cooking light magazine. Anytime I can afford it, I have to snatch it up at the store. Back before I became a mom I had a subscription to it and I still have every one of those magazines in my bookshelf. I can’t say enough about it! I would be ecstatic to have a subscription again. What an awesome giveaway.

    I didn’t even know there was such a thing as a portions scale! That is amazing. Watching my portions is a daily struggle for someone like me. Even if I don’t win it I will put that on a wishlist. Thank you for letting me know something like this exists. 🙂

    How funny! This is the second day in a row, I believe, that I checked out foodgawker.com before looking at the other food blogs I have bookmarked, only to find out that one of the things I admired was something you posted – biscuits and pudding. If Cooking Light has recipes like this, a subscription would be a nice thing to have! I’ve been meaning for some time to get a food scale, too.

    I am addicted to pumpkin recipes – we had a “Great Pumpkin” party today and made pumpkin pancakes and pumpkin zucchini bread. I adapted the Cooking Light Banana Bread recipe and subbed fresh baked pumpkin and zucchini for the banana, and added in some pumpkin pie spice and vanilla – sooo yummy!

    Thank you for the great giveaways. . . and more for the great recipes! I live in the UAE and have been looking for canned pumpkin for months now–yesterday it finally arrived. I took the first four cans the poor man was stocking on the shelves 🙂 He offered more, but I thought I would be nice and leave some for the next desperate North American! (They had fewer than a dozen.) Now to make your pumpkin biscuits. . . and good ole’ fashioned pumpkin pie. Hmm, maybe I better go back and get the rest so I have some for Thanksgiving!

    That looks great-can’t wait to try it! My mom always saves her Cooking Light and Food Network Magazines for me, so when I am able to come home from school, she usually has a small stack waiting for me! As much as I love getting my mom’s issues, it would be great to be able to call her on the phone and cook a dish “together” though hundreds of miles apart!

    The pudding looks delicious, as do those biscuits! I have looked at scales before and never got one because I wasn’t sure it would be worth it, but it would certainly be interesting to see how I normally cook and if my portioning is correct. Cooking Light tends to do a very good job on both the writing and the recipe development though I don’t always follow them perfectly.

    I love Cooking Light! I’ve never seen that scale before, I’m definitely going to have to look into it.

    The only problem I have with Autumn is that I’m not a pumpkin fan and that’s all everyone talks about until after Thanksgiving. And then it’s all about ginger stuff for Christmas and I only recently got into gingersnaps. At least there’s Christmas music to hold me over. Hehe.

    Cooking Light is my cooking bible. I have so many of their cookbooks….I even purchased a 1990 cookbook from a used book store this weekend! So fun to see the older recipes and how nutrition guidelines have changed!
