I have a lot of really talented friends. It’s made apparent to me as I browse the internet and see recipe after recipe, or beautiful photograph after beautiful photograph, by friends of mine. My mailbox each week is also a representation of how awesome my friends are. Several times a week I have cookbooks, beautiful cookbooks, delivered to my door. It amazes me to think how far some of these bloggers have come to create these stunning books! Although I know I don’t have it in me to write a cookbook, I have a ton of respect for anyone who does.

Express Lane Cooking Cookbook Review

My friend Shawn, from I Wash You Dry, is one such friend. Her cookbook Express Lane Cooking  was released this summer and I’ve been cooking from it off and on ever since. The concept behind Express Lane Cooking is simple, yet brilliant. Basically, Shawn takes 5 ingredients and provides 3 delicious recipes using those 5 ingredients.

If you are someone who loves menu planning, but wants your menu planning to be simplified, this book can help you out! The variety offered in each of the recipe choices is amazing, especially since Shawn uses the same 5 main ingredients for each trio of recipes.  For example, the Saucy Chicken Tacos recipe I’m including in this post has rotisserie chicken, fire-roasted tomatoes, corn, corn tortillas and cheddar cheese as the 5 main ingredients. Shawn then goes on to show how you can make Easy Chicken Tortilla Soup and Fire Roasted Chicken Enchiladas using those same 5 main ingredients.

Express Lane Cooking {Recipe: Saucy Chicken Tacos}

A flavorful and simple shredded chicken taco recipe your family will love!

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup canned corn drained
  • 1 12 oz jar roasted red peppers, drained and chopped
  • 1 tsp chili powder
  • ½ tsp cumin
  • 2 cloves garlic minced
  • 1 Tablespoon minced onion flakes
  • ¼ tsp salt
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese

Instructions

  • Combine the chicken, corn, roasted red peppers, chili powder, cumin, minced garlic, minced onion flakes and salt in a large skillet over medium heat. Stir until heated through. Warm the tortillas and keep warm until ready to serve.
  • Divide the chicken filling among the warm tortillas and top with the cheese and any additional toppings you desire.

    To me, flavor is the only reason for eating a certain dish. I think if they had flavored cardboard I would be happy. Love it!
