Friends, it’s starting to get to that part of the summer where my anxiety about school starting begins to set in. I absolutely love summer. Love love love it. I love having my kids home with me, spending the days with them, slow, al fresco dinners and lazy, lounging mornings.

I have a really hard time transitioning back to a school schedule, where everything is practically as opposite of our low key summer as you can get.  After school sports and activities, spelling tests, reading logs, early morning wake up calls, and dinners scheduled down to the minute so we can all be home at the same time to eat them. It all drives me a bit nuts.

Grilled Hot Dogs with California Avocado RelishSo here’s what I’m going to do… I’m going to try my darndest to ignore the fact that school starts back up in just a couple of weeks. I’m going to keep enjoying simple times and simple dinners… like these grilled hot dogs with California Avocado relish. I mean, does it get any simpler in the summer than a couple of plump hot dogs sizzling on the grill? It really doesn’t.

Grilled Hot Dogs with California Avocado Relish Recipe

California Avocado Relish gives grilled hot dogs a sophisticated twist.

Ingredients

  • 2 ripe California Avocados peeled and seed removed, diced
  • 1 small red onion coarsely chopped
  • 1 red bell pepper seeded and coarsely chopped
  • 2 roma tomatoes chopped
  • 1 Tablespoon white balsamic vinegar
  • Juice from 1 lime
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon pepper
  • 8 hot dogs grilled
  • 8 buns
  • Prepared mustard if desired

Instructions

  • In a large bowl, stir together everything except the hot dogs, buns and mustard.
  • Prepare each bun with mustard (if desired), hot dog, and top with 1-2 spoons of prepared California Avocado relish.
  • Serve and enjoy.

    I can so relate Kristen. My oldest daughter started today and yesterday as we were running around squeezing all the last minute summer activities in I constantly had to fight back the tears. I love having all four of my kiddos home and the laid back schedule summer lends itself to.

    Even though I like our homeschooling schedule, I am not ready for it yet. I want the long days of summer for a little bit longer! I love that you topped the dogs with avocado relish! I have a ton and they need to be used up!

    I can’t say I have the back to school worries, probablyyyyy because I have zero kids!
    BUT I am ALLLL for some grilled hot dog goodness with my beloved California Avocados. That relish? Totally my jam! Love it. Pinned!
