Menu Planning Deviant

ameal007.jpgToday was the first day of getting back on the "follow my menu plan" bandwagon, and I have already had to stray. I wrote out my list of meals last week and when I went to prepare everything for tonight’s Chicken Marsala from the Good Home Cookbook, I realized I was missing the main ingredient. Marsala Wine. I could have sworn that we had a bottle, but after searching through all of the wine we have, I came up empty handed. Since there is not really a good substitute for Marsala Wine, I decided to try out a different recipe. I went to one of my favorite recipe sites, Recipezaar, and typed "chicken mushrooms". A list of tasty looking recipes popped up, but the one that really jumped out at me was the recipe for Balsamic Chicken and Mushrooms. I had all the ingredients on hand to make it, and I know that we love the flavors these ingredients make, so I substituted this recipe for my original plan of Chicken Marsala. This dish was so easy to put together and the combination of balsamic vinegar, Dijon mustard and garlic was absolutely perfect. Combined with a Raspberry Vinegrette mixed greens salad, some penne pasta, the delicious ameal005.jpgTexas Roadhouse Buttery Dinner Rolls that I made, and homemade apple pie and ice cream we had the perfect meal to start the New Year off on the right foot!

    The Parade was truly spectacular! You really can’t imagine how detailed and how fragrent these rolling works of art are until you’ve worked on them or have spent time close-up and personal with them. And such a glorious day! (quite chilly, though…for California at least!)

    Yeah, I tried menu planning for awhile but we never wanted to eat what was planned that night. 🙂
    So we stopped doing that.

    I love balsamic and mushrooms! And I just recently came upon Recipezaar: I haven’t tried it out yet but since you recommend it, I will be sure to put it on my touring list for the week!

    There must be some grimlin who goes around reading what is on the menu for dinner and removing items that I know are there from the pantry! But, I’d say you cheated the pantry stealing grimlin from ruining your dinner! That is beautiful.

    i’m so impressd with your menu menu planning skills i think i’ll just use yours since you went thru all the trouble! sounds awesome. the whole meal with pie and ice cream sound wonderful 🙂

    This chicken looks delicious and those rools, too. I’m a bread maniac myself. I haven’t baked bread as much as I would like to and it’s so hard to keep my hands off yeast. lol

    Ever since Nigella turned me on to marsala, it’s as important an ingredient as soy sauce to me. Hate when I run out. But, the chicken you fixed looks delish! Beautiful picture!!!
