A Cool Pick Me Up {Recipe: Strawberry Cafe’ Shake}

Doesn’t school starting mean it should be fall like? We’ve hit 100 degrees here in Kansas City the past couple days and school has already been in session for 2 weeks! I’m ready to break out the long sleeved tee’s and jeans, but as Kansas would have it, I am still sitting here simmering and sweating in sundresses.

I’m one of those people who can drink hot coffee in the mornings no matter what the temperature is outside, but once the afternoon rolls around, I want something cold and refreshing. It never fails that around 3pm, right before the kids get home from school, I start to hit a slump and need a cool pick me up. I love iced coffee but always forget to plan ahead by brewing some to have ready in the fridge. I am so glad my friends at International Delight do all the work for me! With the International Delight Iced Coffee, all I have to do for a refreshing afternoon pick me up is put some ice in a glass, open up the carton and pour. Simple as can be.

When I want more than just an iced coffee… when I want something a little more indulgent… I turn my International Delight Iced Coffee into a milkshake! My favorite combination is 1 cup of International Delight Iced Coffee in Vanilla flavor with 1 scoop of vanilla ice cream and a handful of strawberries. Simply place all the ingredients in a blender and process until smooth. Pour in a tumbler and top with whipped cream and strawberries if you are feeling extra indulgent!

So it looks like summer is here to stay, for at least a few weeks longer… as long as I get to continue to cool off with my favorite iced coffee beverages, I guess I can deal!

      I think since it’s a giveaway page you can’t access from a phone… has to be from a computer. Or at least I tried on my phone and didn’t have luck but did on my desktop!

    It’s crazy that the hottest week of the summer is occurring when all the kids have gone back to school!

    Hi Kristen! I can relate to the heat….living in South Florida means we won’t experience fall temperatures for another couple months at best. Sometimes we get a “fluke” cool snap in mid Oct, but by “cool” I mean dips into the 60s at night and high of high 70s during the day. But usually we have to wait until end of Oct/beg of Nov.

    When you mentioned the “fall in NYC” quote it totally reminded me of our time in NYC together for Sandra Lee. Of course it was spring, not fall….but we had such a blast. I can’t wait to get back someday, and especially show my kids and hubby! I’m excited to be back to blogging…I was pretty quiet the past few months (or more!), and finally BACK at it. Great to “see” you!

    looks amazing, I love those Mexican glasses, I have the same ones but with blue line at the top. Everything seems to just taste better out of them!

    I love that gif! I love iced coffee this summer, even though we’re lucky enough that it never hit 100 degrees. I’m so proud of that, haha.
