Summer Rice Krispies Treat Challenge {Recipe: Tangy Watermelon Rice Krispies Treats}

Rice Krispies treats - letsd have a fun Rice Krispies treats picnic!

It’s that time of year again – time for another Rice Krispies Making Memories challenge from The Motherhood. This time around, team Kansas City has been challenged to create a unique Rice Krispies treats recipe that would be suitable for summertime fun. Well, what better way to celebrate summer than with a ant lovin’, watermelon eating, burger tasting picnic!

Team KC (Kelly from Kansas City Mamas, Jenn from Super Jenn, Julie from My Kansas City Mommy & I) had a little too much fun with this challenge. I love these ladies…they know how to have a good time and were able to make me laugh when I really needed some time to let loose and laugh. We may or may not win the challenges, but I consider myself a winner because I’ve been given the chance to make some really wonderful friends.

Rice Krispies treats fun picnic recipes!

OK – I’m done with the sap now. On to the picnic. Our picnic creation included our signature Tangy Watermelon Rice Krispies Treats, the cutest Rice Krispie Treats burgers and some little ants who had to march right over and join in on the fun. Rice Krispies Treats Picnic

Rice Krispies Tangy Watermelon Treats

Author Dine & Dish

Ingredients

  • 1 bag marshmallows
  • 1 bag strawberry flavored marshmallows
  • ½ cup butter plus extra for greasing
  • 8 cups of Kellogg’s Rice Krispies
  • 1 packet watermelon-cherry drink mix
  • 1 packet lime drink mix
  • Raisins or chocolate chips for garnish

Instructions

  1. For the Green Layer
  2. Grease one 9” round cake pan and set aside.
  3. Place four cups of Kellogg’s Rice Krispies in a large bowl.
  4. Melt ¼ cup of butter in a large sauce pan over low heat. Add regular marshmallows and stir till melted and well blended. Cook two minutes longer. Stir in lime drink mix and stir till well blended.
  5. Pour marshmallow mixture over Rice Krispies and stir till well coated.
  6. Using a butter spatula, press mixture around the outer rim of cake pan to desired to width (about one to two inches.)
  7. For the Watermelon Layer
  8. Place four cups of Kellogg’s Rice Krispies in a large bowl.
  9. Melt ¼ cup of butter in a large sauce pan over low heat. Add strawberry marshmallows and stir till melted and well blended. And then cook two minutes longer. Stir in watermelon-cherry drink mix and stir till well blended.
  10. Pour marshmallow mixture over Rice Krispies and stir till well coated.
  11. Using a butter spatula, press mixture into the remaining area of cake pan.
  12. One cool, add raisins or chocolate chips for garnish.

    my favorite picnic food is pita chips and homemade hummus! that’s given you have a cooler (i’m a little paranoid about the hummus). otherwise, i bake some slices of bread at home and bring them with me, top them with cheese and tomatoes and you’ve got picnic bruschetta

    I am in St. Louis so I love Porksteaks, they tend to be a local only item. reminds me of cardinals games on the radio, the smell of budweiser in the air, home grown watermellon and catching lightning bugs

    I love to take angle food cake with me on picnics. Its a dessert that’s light and can eat with your fingers. The last picnic we did take rice krispies treats, not lying, love those too!

    It sounds silly, but my favorite thing to eat at picnics is a peanut butter and jelly sandwich. When I was a kid my mom would pack pb&j sandwiches and the whole family would trek to the lake for a picnic lunch and board games. Just biting into a pb&j sets off a rush of memories for me.

    It seems like we had a lot of family picnics when I was a child. I remember Grandma’s cold fried chicken, potato salad, dill pickles, really big oatmeal cookies, a cold watermelon, and homemade lemonade in 2 quart canning jars.
    I want to make those memories for my grandchildren.

    Please be careful to use only GLUTEN FREE Rice Krispies (the new kind in the off-white box) if you want these to be gluten free. Regular Rice Krispies contain malt flavoring, which does contain gluten. People with severe intolerance or Celiac Disease should never eat regular Rice Krispies.

    If I had to pick my favorite summer treat, I’d have to say it’d be frozen yogurt. There is nothing better than putting a spoonful of cookies and cream froyo topped with peanuts and walnuts in your mouth after an absurdly hot day. I just find an immediate relief from the heat as soon as my mouth makes contact with the spoon. Best thing for summer, in my opinion.

    I like just about any food that is served at picnics or BBQ’s. The food even tastes better when it’s a pot luck and everyone one brings a dish to pass. I always get some good recipes for future get togethers this way.

I is for Inspiration!

The “long haul” effects of having Covid back in December are really presenting themselves lately. The continuous persistent headaches are taking a toll and the connection between the brain fog and word retrieval function of my brain has been extra challenging. I had no idea a couple months out, the cognitive effects would still be hanging around.
.
With that said, when I get a burst of inspiration I’m grabbing on for dear life. I made our favorite chocolate chip cookies recipe yesterday and felt the desire to update the blog post photos from 2007! We make these cookies all the time, so I’m not sure why it’s taken me so many years to give that poor post some new photos.

It was so strange being on a plane again. I’m so thankful I have the antibodies because the flights were full, which seemed wrong, but everyone around me did seem to keep their masks on, so that was good.

I can’t wait until travel becomes a regular part of life again. I’ve missed it so much!

G is for...oh so grateful!

I flew to South Texas yesterday to visit my parents whom I haven’t seen in 2 years. They live around 17 hours away from us. We typical get to see each other a few times a year but with the pandemic and other health issues it just wasn’t able to happen and I’ve missed them soooo much.

Grateful to have had COVID last month. Although it was not at all fun, it gave me the antibodies to make this trip possible. My dad is having surgery tomorrow so I’m helping with my mom so my dad can recover without having to worry about her.

Kansas is enjoying frigid temperatures and snow. I picked a great week to head south.

F is for...food photography.
.
This time of year especially, food photography (and I guess all photography actually) is a tug of war with time and light. I had planned on making and photographing a delicious pasta recipe, but my grocery delivery ran a couple of hours late because of snowstorm. So, at the eleventh hour I decided to make a cake...that took over an hour to bake and I had about 90 minutes of natural light left...leaving me with about 30 minutes of ok light to work with.
.
Anyway, this wouldn't work for a client shoot because the cake, although delicious, didn't turn out looking so great. But it will work great for today's F photo for the @kimklassen_innercircle A-Z photo project:) Lemon Citrus Yogurt Cake from this weeks @cabotcheese newsletter. So good!

There’s a lot of excitement in Kansas City as our beloved @chiefs head back to the Super Bowl this weekend! #runitback 🏈

It’s so strange because winning the super bowl last year was the last “normal” thing that happened before the pandemic hit. We went from a city full of excitement to shutting down and sheltering in place. Maybe when we win and bring the trophy home this year, it’ll be the start of something great. Let’s hope!

D is for... Dreary (and Dog)
February has always been my least favorite month. I have a special name for this month that may start with another not so nice F word...🤭.

In Kansas, the sun usually doesn't shine that often, it's cold, and just kind of gray and blah.
.
My indoor jungle makes me happy though...especially this space in my office. Houseplants almost makes me forget we’re in the “F” month 😂.
.
Also, my dog (my favorite d word) would not sit still for a picture when I had my tripod set up, but I finally caught her sitting on her bed and had to catch a picture with my phone. Swipe and you’ll see she is much overdue for a haircut.

C is for Coaching, Coffee and Crystals! Lots of C words today. My @rockyourhappy coaching practice has been the best thing. I am so lucky to be working with really great clients who are doing the hard work and making big changes in their lives. It’s been the perfect fit for me and I know it’s what I am meant to be doing. Coffee, of course, is my favorite C word and Crystals…my daughters got me into the energy powers of crystals and it’s been really fun to learn all about them.

B is for Books! Are you a big reader? I wasn’t really a reader growing up. Well, I take that back. In junior high I plowed through the Sweet Valley High series (anyone else?) 😊 And when I was in elementary school I would bust my butt to get to the highest level in the SRA Reading box before anyone else. But I wasn’t a kid who you’d find with their nose in a book, ever.

It wasn’t until I was an adult, and my kids began to sleep through the night, that I started reading for fun. Now, I read all the time and it’s one of my favorite pastimes. I love talking books with people and sharing recommendations. I really don’t watch TV, so books, especially right now, is my main form of entertainment.
.

This is why for the @kimklassen_innercircle A-Z photography challenge, I knew that Books would be my B. It’s my favorite B word (beating out Bullet Journaling, Bread, Blankets, Be Happy, etc).
