The very first time I had Avocado Ice Cream was at Herzog Wine Cellars in Oxnard, California. I’ll admit, I was really hesitant to try avocado ice cream at first. No matter how much I love Avocados, the thought of this beloved, savory fruit being a part of dessert just didn’t sound good. I quickly put any hesitation aside after the very first bite… avocados and ice cream is a fabulous combination!

The cool, creamy, nutty flavor California Avocados add to ice cream is unique and delicious. In fact, it’s one of those flavors you’ll crave time and time again after trying it the first time!

 Making homemade avocado ice cream isn’t too hard, but I wanted an easy way to get the flavor profile of avocado ice cream without having to drag out my ice cream maker. The result is what I’m calling “Shortcut Avocado Chocolate Chip Ice Cream”. You see, with this method of making ice cream, you simply doctor up a carton of high quality vanilla ice cream with some California Avocados and chocolate chunks. This is the real deal, without a whole lot of extra effort! As a bonus fun way to serve this treat, I scooped the prepared ice cream into the avocado shells…easy and zero dishes to wash. Labor Day weekend is one of my favorite weekends to celebrate yet it’s also bittersweet. I love having a big bash at the end of the summer to bid farewell to the season. Labor Day means we are one step closer to my all time favorite season, fall. I hate that one step closer to fall means one step closer to my least favorite season of winter. I’m just going to block out the fact that winter is closer, and focus on having one heck of a time with our end of summer celebration.

 Do you entertain Labor Day weekend? To me, this weekend is all about savoring the last of the summer flavors…California Avocados at their prime, fresh vegetables and fruits, sparkly summer cocktails and grilling outdoors. Inspiration strikes in the strangest of places sometimes. I’m one of those people who always keeps a notebook and pen by my bed because I can write the absolute best blog posts in my sleep. When I wake up I try to remember what my blog post idea was and jot it down in a notebook. Of course, what I wrote in my dreams is never as good as what I end up putting down on paper.

My second most popular place for inspiration is the shower.  Seriously, the one place I am during the day without pen and paper is the one place my most genius ideas pop up.  99% of the time my mushy brain can’t remember my genius idea by the time my shower is over.  (Funny story… my old boss used to have dry erase markers in his shower and would write things down on the shower door when inspiration would strike! He’d also always write on his car windows when he’d be stuck in traffic. Random.)

We are almost a week into summer break and my kids are already expecting me to feed them 3 meals a day, plus snacks. What’s up with kids thinking they need to be fed all the time? 🙂

Seriously though, my biggest challenges during the summer revolve around keeping the children well fed. It seems like between the pool, sports activities and getting things checked off our Summer Bucket List, we are either on the go during meal time or popping in the house for a short bit before we head onto our next thing. My kids like to call the way I feed them during the summer “snackie summer meals”. I’ll admit it…feeding my kids great lunches during the summer isn’t my forte.
