California Avocado Walking Tacos

This recipe for Walking Tacos was created using fresh California Avocados.

California Avocado Walking Tacos www.dineanddish.netCinco de Mayo is coming up, which happens to be my favorite food holiday of the year. I know that Cinco de Mayo has way more significance than just the food, but you have to admit…it’s hard to find a holiday to celebrate with better food around!

For the avocado lover, especially, Cinco de Mayo is the mecca of all holidays because it’s the perfect time to highlight California Avocados, which are newly in season. There are so many fantastic recipes featuring avocados this time of year! Give me an avocado plain, and I’m a happy girl. Give me a buffet of recipes, all featuring avocados, and I’m thrilled. Like a kid in a candy shop!California Avocado Walking Taco dineanddish.net

If you’ve been to any kind of fair or festival, you’ve most likely seen Walking Tacos around, usually featuring ground beef. We enjoy walking tacos so much, you may have remembered me blogging about the ground beef version a few years back (recipe can be found here).  I especially love to serve Walking Tacos at parties…it’s the perfect “hold in your hand and walk around and socialize” food! Great for a Cinco de Mayo party!

I decided to “California”-up my recipe a bit. Instead of using ground beef and taco seasoning, I used some lightly seasoned grilled chicken breasts. I also added some bacon and replaced the typical Western Dressing with a Cheddar Chipotle dressing. I, of course, recommend topping your Walking Taco with a generous helping of California Avocados. This is one of those party recipes you’ll become known for… people will be making it at their own parties and remembering that it was at your epic Cinco de Mayo event where they had it the first time.

Happy almost Cinco de Mayo and happy California Avocado Season! Enjoy!

California Avocado Walking Tacos

A California-ized version of the famous Walking Taco fair food. Perfect for your next Cinco de Mayo event!
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 6 individual sized bags of Doritos or Fritos chips
  • 2 grilled chicken breasts seasoned with kosher salt and pepper
  • 6 slices cooked bacon diced
  • 1 can Bush’s Black Beans cooked and drained
  • 1 cup Colby Jack cheese shredded or diced
  • 2 California Avocados pit removed and diced
  • 1 bag Spring Mix salad greens
  • 1 cup grape tomatoes
  • 1/2 cup Chipotle Cheddar or Southwestern salad dressing I use Brianna's brand

Instructions

  1. Gently take each individual bag of chips and crush the chips. Once the chips are crushed, cut open the top of the bag.
  2. Scoop lettuce into each chip bag. Top with diced and cooked chicken breasts, bacon, black beans, cheese, tomatoes, and avocados.
  3. Drizzle with Chipotle Cheddar salad dressing over the top.
  4. Using a spoon, gently fold the mixture, from the bottom up, together within the bag.
  5. Serve with plastic forks for a true on the go meal

Disclosure: I’m honored and grateful to have an ongoing relationship with California Avocados. All opinions expressed are my own.

I’m not going to lie… I have trouble resisting Doritos and Fritos if they are in front of me. PS: Have you ever had the chocolate ice cream taco thing? I want that now…

I hate how all flavored Doritos and Fritos have MSG. The plain toasted corn versions are fine but it sorta defeats the health benefits of a salad.

I’VE GOT ONE BETTER (OR MAYBE TWO) ELIMINATE CHIPS ALTOGETHER. USE SMALL SIZE FREEZER BAGS INSTEAD. CHIPS BAGS ALWAYS SEEM TO TEAR & THERE’S NOT STOPPING IT ONCE IT STARTS. PUT ALL INGREDIENTS (?) INTO A LARGE/GALLON FREEZER ZIP LOCK BAG & TOSS GENTLY. THEN CAREFULLY PUT FOOD INTO SMALL FREEZER BAGS. IF YOU DON’T LIKE THE PLAINNESS OF THE BAGS, YOU CAN GET A COUPLE OF DUCT TAPE ROLLS (THEY COME IN DIFFERENT DESIGNS NOW!) & CUT DESIGNS OUT AND PUT THEM ON THE BAGS. ALSO IF YOU REALLY CAN’T IT ALL ( YEAH, RIGHT!) YOU CAN ALWAYS ZIP IT UP & PUT IT IN THE COOLER FOR LATER.

December 2019 my absolute favorite camera lens fell out of the cabinet I keep it in and shattered in a million pieces. I cried for days and days. I barely picked up my DSLR in 2020 because I just felt so uninspired. I couldn’t get the shots I was visualizing in my head with the lenses I had.
.
Nick and the kids replaced my favorite lens as a Christmas gift and I’m ecstatic to be shooting again! I joined my incredibly talented friend @kimklassen creative photography Inner Circle for extra inspiration this year. Assignment 1 out of the gate and I already feel eager and excited about photography again! (You can see my “tell a story through multiples” in my Instagram story.)

Three cheers for bursting with inspiration again, after all this time.

Last year I couldn’t believe I was old enough to have an 18 year old. This year I look in the mirror and see someone old enough to have a 19 year old. This past year has been a lot and man, it has physically aged me! But one things solid and firm...I love my kids and am so proud of them! The resilience Jacob has shown this past year has impressed me...”graduating” high school, starting college, all when things have been so up in the air and unsure. And never once complaining about it. My kids haven’t lost a thing this year...instead they’ve gained so much they wouldn’t have gained without this experience. I’m so proud to be their mom. Happy 19th birthday @jacobdoyle02 We are fiercely proud of you and love you so much!

It’s a book giveaway! I often get people asking me for book recommendations. Talking books is one of my favorite things to do! So when @librofm gave me the opportunity to give away three audio copies of any audiobook I wanted to, I knew immediately which book I wanted to share.
.
@roblowe book, Stories I Only Tell My Friends is the audiobook I recommend to EVERYONE. It is a book I listened to years ago, not expecting to love it, but I absolutely did. First of all, Rob Lowe narrates...so there’s that lovely bonus. But Stories I Only Tell My Friends is a funny, raw, emotional, informative, peek inside of the life of a really fascinating celebrity.
.
I wasn’t a Rob Lowe super fan before. I haven’t watched West Wing (I know, I know), Brothers & Sisters, Parks & Rec, or any of his TV shows, but I have always been a HUGE Brat Pack fan. Well, after listening to this audiobook I am a big fan (and his other audiobook, Love Life, is great too).
.
Long story short, I have three codes through @librofm to give to 3 people. To enter, leave a comment on this post by midnight CST on 12/16 telling me what your favorite audiobook is and why! Also, definitely check out Libro.fm - the best audiobook platform that also gives back to local bookstores!

Alright, alright, alright! It’s time to talk about how we can support our local bookstore during the holidays and beyond! As you consider buying gifts this year, make sure you shop local for all the book people on your list! One unique and super easy way you can support your favorite local bookstores is with an audiobook subscription to @librofm Yes! Audiobooks! With Libro.fm you can financially support your local bookstore AND buy audiobooks all at the same time. Each audiobook purchase supports the independent book store of your choice! Do it for yourself and buy some audiobooks for friends too!
.

If you need audiobook ideas, hit me up. I’ve listened to so many great books this year that will make it on my top favorites list, including Greenlights by @officiallymcconaughey It’s narrated by the author and is so worth the listen! Your ears will thank you!
.
PS my favorite #localbookstore @rainydaybooks is under renovation which makes it even better that I can still safely support them from the comfort of my own home!
