OK – I have a question for all of you. How many of you have gained weight since you started your food blogs? It’s confession time! I started my blog at the very end of November and at that point I had exactly 10 pounds of baby weight left to lose. Well, as of a couple of months ago I had gained an additional 7 pounds. I am blaming this unfortunate weight gain on my need to cook and research for my blog and on all of the tempting blogs I visit.

Rotisserie Chicken recipe from dineanddish.netI decided a few weeks ago that it was time to do something about this so I joined the Weight Watchers online program. I follow a spin off of Weight Watchers called the Wendie Plan. This plan allows you one Super High Points day. I use this super high points day to eat whatever I want. If I am craving something really bad for me, I know that if I just wait, I can have it on that day.  In the three weeks since I have been on the program I have lost 8 pounds. Knowing that I don’t have to give up anything has helped. Tracking the food that goes into my body is another thing that has been helping me. If I want some cookie dough, I just account for that during the day and make sure I save those points to go towards that.

Anyway, why am I posting about all of this boring weight loss stuff? Because I want to share a recipe with you! One of those things that we make on a weekly basis is rotisserie chicken. We make it a few different ways, but this recipe is my favorite. Rotisserie chicken is one of those things that you can stretch and stretch into many different meals. Put the chicken on top of salads, use in quesidillas, have it on sandwiches, etc. The possibilities are endless and when you make rotisserie chicken at home you know exactly what you are getting.

Herbed Rotisserie Chicken Recipe

Make delicious Rotisserie Chicken with this delicious recipe!
Course Main

Ingredients

  • 2 tablespoons butter room temperature
  • 2 tablespoons dried herbes de provence
  • 1 tablespoon coarse kosher salt
  • 2 3 1/2 lb roasting chickens

Instructions

  1. Place butter, herbs and salt in small bowl, mash with fork until blended to a thick, granular paste.
  2. Starting at neck of each chicken, carefully run fingers under skin of breasts to loosen. Starting at each side of main cavity, carefully run fingers under skin of thighs to loosen. Rub herb-seasoned butter on chicken under loosened skin and on outside of each chicken. Truss chickens by tying legs together and tying wings flush to sides. Enclose chickens in extra-large resealable plastic bags. Chill at least 6 hours.
  3. Remove spit from rotisserie attachment and prepare barbecue (medium-high heat). Thread chickens on spit, pushing close to center. Reattach spit to motor. Place shallow disposable foil pans under chicken for drips. Close grill, inserting stem of instant read thermometer through hole in roof of grill to monitor temperature. Maintain temperature at around 400 degrees by opening vents to increase heat and closing vents to reduce heat. Cook chickens until thermometer inserted in thickest part of thigh registers 170 degrees, about 50 minutes. Turn off grill, but do not open. Let chickens rest in covered grill for 10 minutes.
  4. Slide chickens off spit and onto platter. Cut each chicken into 6-8 pieces and arrange on platter.

    I haven’t been as adventurous in the kitchen, but I know I have gained weight. First from quitting smoking and inactivity. I’m trying to get active again. And I’m also trying to make a habit of eating breakfast. I normally eat one meal a day and I know that is so unhealthy. It’s hard being GOOD! LOL!! Good luck to you!

    All the best with the weight-loss plan, Kristin. For me, a few extra pounds usually creep up during the holidays, my birthday month and winter (which is now in Sydney)… I have been trying not to bake too much, but it’s hard because being infront of the oven keeps me warm! (that’s my excuse). Recently, I did post some low-fat muffin/cake recipes if you are allowed stuff like that with the program.

    Anyway, I have actually lost weight because I put more thought into meals unstead of just throwing things together and eating quick things. I eat lots more fruits and veggies now, because they look prettier in the pictures! 😉

    yes i definately have to watch it these days. especially since when i cook for recipes to post i don’t skimp of the good stuff like butter and cream. boo! that chicken looks like perfection, oh how i want to pick the meat from the bones!

    Congrats on the loss. I did WW 11 years ago and lost 50 pounds, with the blog it’s 5 on 5 off, but I found really nice neighbors always happy to take my goodies!

    Well done in losing weight 🙂 I have lost a few pounds since stating blogging, but I think it’s because I’m really aware of what I eating now! I might go public with it on my blog, but I’m not ready yet!!

    Congrats on the weight loss so far! I’m right behind you in that I need to start taking this seriously. Most importantly I need to be more active. I don’t know if the blogs have done it or what but they do make me want to eat more and try new things. I’ll have to start looking for lower calorie/fat recipes! 🙂

    Have I gained since food blogging, yes, but those were the doctors instructions. Have I gained a little too much, yes, and I’m working on losing 5, but being a marathon runner, you can’t really compromise too much food. But as always the food looks glorious, just wish I could actually rotisserie a chicken, but apartment living prevents that.

    I’m like Helen; it’s 5 on or 5 off. There’s now way too much focus on food and far less time devoted to calorie-burning activity. I’ve started to halve or quarter the recipes so there are less leftovers, especially the sweets.

    Keeping weight down is so hard! I feeling like I’m gaining weight because I keep trying all the fantastic recipes I see on blogs! Maybe we should start a healthy blogging event and have weekly super-health posts!

    I haven’t gained any weight since starting my blog (runs and ducks for cover). I just exercise ten times more so that I can eat everything thing I make and then I take most of it to work so all my fellow employees eat it.

    I want that chicken for dinner. Perfectly cooked.

    Oh dear…I wish it wasn’t true, but after starting my blog I was fine, then had tonsil surgery and was WAY skinnier.

    But since then…not so good. 🙂

    I LOVE WW.I have never officially joined, but keeping track helps a LOT and the flexibility to eat whatever but balance it out helps me as I am not a rigid planner when it comes to food.

    Love us bloggers being honest. Food is delicious, but when it’s there, I’ll eat it!! 🙂

    I lost about 10 pounds by trying to be very strict with my eating. That was what I told myself I would have to do if I did a food blog. Then I gained it back. Now I’m trying to take it off again. Sigh. The chicken looks marvelous!

    I think I’ve gained a few pounds from food blogging too. Oy… It’s fortunate I can only eat with my eyes while reading other food blogs, otherwise I would be gobbling goodies up left and right! I love the leftovers I can make with roast chicken. I like to make bbq chicken quesadillas.

It was so strange being on a plane again. I’m so thankful I have the antibodies because the flights were full, which seemed wrong, but everyone around me did seem to keep their masks on, so that was good.

G is for...oh so grateful!

I flew to South Texas yesterday to visit my parents whom I haven’t seen in 2 years. They live around 17 hours away from us. We typical get to see each other a few times a year but with the pandemic and other health issues it just wasn’t able to happen and I’ve missed them soooo much.

Grateful to have had COVID last month. Although it was not at all fun, it gave me the antibodies to make this trip possible. My dad is having surgery tomorrow so I’m helping with my mom so my dad can recover without having to worry about her.

Kansas is enjoying frigid temperatures and snow. I picked a great week to head south.

F is for...food photography.
.
This time of year especially, food photography (and I guess all photography actually) is a tug of war with time and light. I had planned on making and photographing a delicious pasta recipe, but my grocery delivery ran a couple of hours late because of snowstorm. So, at the eleventh hour I decided to make a cake...that took over an hour to bake and I had about 90 minutes of natural light left...leaving me with about 30 minutes of ok light to work with.

Anyway, this wouldn't work for a client shoot because the cake, although delicious, didn't turn out looking so great. But it will work great for today's F photo for the @kimklassen_innercircle A-Z photo project:) Lemon Citrus Yogurt Cake from this weeks @cabotcheese newsletter. So good!

There’s a lot of excitement in Kansas City as our beloved @chiefs head back to the Super Bowl this weekend! #runitback 🏈

It’s so strange because winning the super bowl last year was the last “normal” thing that happened before the pandemic hit. We went from a city full of excitement to shutting down and sheltering in place. Maybe when we win and bring the trophy home this year, it’ll be the start of something great. Let’s hope!

D is for... Dreary (and Dog)
February has always been my least favorite month. I have a special name for this month that may start with another not so nice F word...🤭.

In Kansas, the sun usually doesn't shine that often, it's cold, and just kind of gray and blah.

My indoor jungle makes me happy though...especially this space in my office. Houseplants almost makes me forget we’re in the “F” month 😂.

Also, my dog (my favorite d word) would not sit still for a picture when I had my tripod set up, but I finally caught her sitting on her bed and had to catch a picture with my phone. Swipe and you’ll see she is much overdue for a haircut.

C is for Coaching, Coffee and Crystals! Lots of C words today. My @rockyourhappy coaching practice has been the best thing. I am so lucky to be working with really great clients who are doing the hard work and making big changes in their lives. It’s been the perfect fit for me and I know it’s what I am meant to be doing. Coffee, of course, is my favorite C word and Crystals…my daughters got me into the energy powers of crystals and it’s been really fun to learn all about them.

B is for Books! Are you a big reader? I wasn’t really a reader growing up. Well, I take that back. In junior high I plowed through the Sweet Valley High series (anyone else?) 😊 And when I was in elementary school I would bust my butt to get to the highest level in the SRA Reading box before anyone else. But I wasn’t a kid who you’d find with their nose in a book, ever.

It wasn’t until I was an adult, and my kids began to sleep through the night, that I started reading for fun. Now, I read all the time and it’s one of my favorite pastimes. I love talking books with people and sharing recommendations. I really don’t watch TV, so books, especially right now, is my main form of entertainment.
.

This is why for the @kimklassen_innercircle A-Z photography challenge, I knew that Books would be my B. It’s my favorite B word (beating out Bullet Journaling, Bread, Blankets, Be Happy, etc).

A is for Alone. I think one of the hardest things for me to get used to this past year is rarely being alone. My husband used to travel all the time. My school aged kids were in school all day while I worked. I’d even get several days a month in a hotel room by myself for my work travels. I like my alone time and it’s definitely something I miss.

I’m easily distracted so you will usually find me working in complete silence…maybe just the hum of my essential oil diffuser and the sound of my fingers on my keyboard. I need the quiet and treasure silence.
.

With that said, I’ve loved the extra time with my family - and we’ve all learned over the past several months how to give each other space and recognize when we need that space. As of today, my kids all are back to school full time in person 😢. Nick is still working from home and will be for the time being, but now the aloneness feels strange. I’m sure we’ll get used to this “new normal” yet again!
