Menu Planning Monday

Hubby is gone on business again this week, so the kids and I are on our own. I remember when I was a kid and my dad would go out of town on business, we would get to have frozen pizza, boxed macaroni and cheese and hot dogs. My mom always cooked fantastic meals when dad was home, so although we missed him when he was out of town, we looked forward to eating meals that we didn’t get to eat when he was home. Just like when we had babysitters, TV Dinners (with the dessert and everything) was our special dinner. We got to get out the metal TV trays and everything! What a treat πŸ™‚

Our menu this week is pretty much inspired by what we have in the fridge, freezer and pantry that needs to be used up. Check out I’m An Organizing Junkie for other Menu Planning Monday participants!

  • Monday – Easy Chuck Roast from Tammy’s Recipes (modified for Crock Pot)
  • Tuesday – Shredded Beef Tacos with leftover Chuck Roast
  • Wednesday – Tuna Noodle Casserole inspired by Pinch My Salt
  • Thursday – Mom’s Mustard Chicken from Apples and Butter (my adoptee!)
  • Friday – Homemade Pizza
  • Saturday – Date night out at the Barn Party – eating at the party!
  • Sunday – Zippy Chicken and Mushroom Soup from Dine & Dish (one of our Family Favorites!)

    I looked forward to my dad going out of town because he always brought back candy! No menu plans for me this week, I’ll be eating out every night… which is mostly a good thing. Your menu sounds grand, especially Thursday’s mustard chicken.

    I don’t know what it is, but I can’t get motivated to cook when my husband won’t be home for dinner… probably because he is the only one that will always eat what I make. Homemade pizza… yum! Maybe we will do that this week. It’s always a hit!

    I did a weekly menu. It’s been a long time since I’ve planned ahead for the week. Most nights it’s come home and throw some stuff in a wok and call it dinner. πŸ™‚

    Tuna Noodle Casserole is our Wednesday meal too! That recipe is almost like the one I use. I add about two inches of the big block of Velveeta and increase the milk by a 1/4 cup. I also don’t put the peas in because my family doesn’t like them by themselves. Hmm, maybe I’ll put some in this time and see what they say!

    Also, what time should I be at your house on Sunday for dinner. πŸ˜‰ That soup looks amazing!

    I think my kids loved dinner more last week when my hubby was out of town… they got to choose some stuff they loved! Of course, when sandwiches are chosen, I love it too! Keeps the kitchen cool and life easy on those nights.

    Sounds just like our household, when i’m away on business the wife doesn’t see the point in cooking, think she forgets to eat most of the time, i’ll point her this way for cooking ideas πŸ™‚

    When I was a kid, my Dad would go out of town every summer for 2 weeks for summer camp with the Nat’l Guard and I used to look sooooo forward to getting to eat pot pies and TV dinners. I can also remember playing Scrabble and getting to stay up late to watch The Love Boat and Fantasy Island with my Mom. Those were good times! BTW Kristen, I’m moving to Charlotte in the next month or so…want to come visit me? I know you have a fascination with the city….You have an open invitation πŸ™‚

    No matter what I do I cannot seem to stick to a meal plan. I’m too impetuous! But I do try to stock the fridge and pantry with specific meals in mind. Of course, the other half of that is my other half — he’ll have his own ideas about what to make for dinner, and he gets home before me. πŸ™‚
